Desi receipes for diabetes

I have a guest coming to stay next week who is diabetic (type 2) and am confused about what to cook them.

I need desi recipe suggestions please.

Carbohydrates from whole grains along with fiber rich foods and low quantities of fats is the trick to cook for diabetics.

So concentrate on Grill recipes, oven baked recipes etc ... salads ...
Make sure you reduce the oil content /fat in the food ... make more vegetable dishes.
Stay away from rice and white bread .. and for roti's use whole wheat flour ...

the rest of the recipe stays the same really...

According to this website, here are some food suggestions:

The problem with our desi food is that we use way too much oil and then we mash and bhunify the vegetables sooooooooooooooooo much that by the time we’re done cooking…the vegetable looks NOTHING like it’s original form and most if not all the vitamins are lost in the cooking/heating process. So, don’t overcook veggies. Put them in salads and and sandwiches and soups, so they’re fresher.

Ask your doctor if it’s okay for your mom to eat sweet potatoes because they’re soooo nutritious and good for you. And they’re recommended in the above website. You can cut slices of sweet potatoes, sprinkle salt and pepper on them, brush them with olive oil, and set them to bake until slightly crispy.

Citrus is also recommended. Avoid white bread, stick to whole grain breads. Avoid refined sugars and carbs such as cookies, cakes, mithais, etc. Opt for simple carbs that also contain fiber such as fruits and veggies. If your mom doesn’t like fish, you can even look into flax seeds or flaxseed oil which contains Omega 3 acids like fish.

Also, stay away from white chawal, they’re fattening…and they don’t contain much nutritional value. Instead opt for brown chawal which is healthier. Opt for whole wheat pasta as opposed to white pasta.

Thanks for the info guys. It's not actually for my mum but for another person, not that it makes any difference.

So basically I should be okay as long as I don't use too much oil in the salans and cook loads of veggie dishes too, as well as opting for rotis instead of naan. Will be hard to substitute the rice, I guess they will just have to avoid it or only have a little bit as I doubt pilau/biryani made from brown rice would taste that nice.

Now I have to think about desserts.......

Fruit chaat!!

Someone made it on come dine with me! I could so see you serving that.

I have heard that basmati rice is alright for diabetics, and eaten in moderation shouldn't be a big issue.

Fruit is a natrual for any dessert, some fruits have more sugar than others, but generally they are okay.

For pretty much any other dssert, u can substitute real sugar with equal or splenda.

Wheat pasta instead of white.

Use a healthy oil (olive, canola, etc)

Don’t overcook the veggies. Use fresh veggies (salads, sandwich).

I’ve seen pilau made from brown rice. That’s how we’ve always made it in my family. It can be done.

since you asked for desi recipes, daals of all kinds are good, even haleem (made from lean chicken), vegetables of course but do avoid potatoes and peas, grilled/baked tikkas, fish curries, lean meat kababs (only shallow fried or grilled) everything can be served with a side of brown rice and whole wheat rotis/pitas.

I'm a diabetic, type 2 in fact

My suggestions are:

for starters grilled kebabs/tandooris (chicken is great-low fat is great)
mains: any handi-just keep the fat low and avoid adding potatoes to it as potatoes do contain sugar (they make my sugar levels rise quickly) How about a side dish of tarka daal? Daals are highly recommended for diabetics.

For dessert how about a fruit tart made with a few layers of filo pastry, some lovely fruit sprinkled with cinnamon and some 'fake' sugar e.g. candarel (sorry cannot spell today!) in small doses artifical sweeteners are okay, too much can be an issue. Serve with low fat fromage frais.

I would recommend a fruit chaat too however fruit does contain sugar too and too much fruit especialyl at night may not disappear by the morning when they test their levels so if you do serve a fruit chaat try to serve it during the day.

You could also look at sugar free frozen yogurts/ice-creams/jellies too.

Oh daals! Had totally forgotten about those (am guessing that shami kebabs will also be okay then?)

Also, is gram flour okay? Am thinking of some pakora style fritters, obviously not deep fried. I remember visiting someone years ago who was diabetic and they used to make a 'omlette' type thing using besan and adding the veg to that and cooking it all on a low heat in a shallow pan.

Do you think I can make rasmallai using fat free milk and artifical sweetener?

Am glad to hear that basmati rice is considered okay for people with diabetes.

Shaami kebabs are fine, as you'll be shallow frying.

Gram flour is fine, as chickpeas are. Hows about a cholay chaat (minus potatoes).

Rasmallai-I'm not sure hun. I've only ever done cakes/tarts etc.

Generally speaking diabetics are encouraged to go for high fibre.

Eggs are generally good too, hows about making a desi version of scotch eggs? Go down a treat in our house? I simply use a keema mix made with the same recipe as say seekh kebabs, mould it around the eggs, coat in brown bread crumbs, brush with a little oil, make in the oven-voila! Nargasi kebabs meet the UK version.

If they are staying do you intend to give them breakfast such as cereal or a cooked desi breakfast? If you go for cereal avoil museli (sorry cannot spell today) as they are high in silly sugar, I generally check the pack and see how many grams are actually sugar per serving. Even for none-diabetics it's an eye opener.

Thanks for reminding me about the breakfast, hadn't even thought of that. Actually, that besan omlette thing that I mentioned earlier was a breakfast dish that I'd seen, but if diabetics can have eggs then I can make them a normal egg omlette right?

What do I do about the parathas?

HMM......use good quality whole wheat flour (aata) and a healthy oil. Perhaps olive oil? That's what I can think of.

I agree with Redvelvet-whole wheat atta and a healthy oil should be fine. Give it a go beforehand, as you may wish to not serve plain parathas and add stuff like spring onions, chilli flakes etc. Meethi (fenegreek) is also cool in parathas in my opinion as are fried onions (shallow fried until soft, drained well).

Normal egg omlette is fine, I wouldn't go made with oil/fats though.

May be you are worried about nothing. Some diabetic are not concerned about what they eat . In fact they will get offended if you try to feed them what they are supposed to eat.
So talk to that person and find out if he/she is into food for diabetes.
This months Readers digest suggests for diabetics:
1. Fish and poultry more than red meat.
2. Fruits and nuts ( specially walnuts)
3. Beans and vegetables
4. Canola , corn olive oil more than butter and margarine.
5. Olives

I know the person in question is concerned about their diabetes hence why i'm anxious to cook them food that they can eat without feeling too excluded or without me having to cook two separate menus.
