here is something completely useless for most but interesting to scan

btw anyone know of a low carb or low fat pakora recipe? :smiley: i suppose for low fat u bake it instead of frying it or instead of deep frying it just panfrying it, for low carb..maybe make it from something other than besan, almond flour perhaps

That's for 3.25 oz or 92g...almost half cup of besan which will yeild about 10-12 thinly sliced aloo key pakorey I think.

But besan is hi in fiber and low in saturated fats. So you could mix half besan and half semolina I suppose. Lemme check up semolina details. I think semolina or sooji doesn't soak up oil.

I look at many desi foods in general and wonder what the profile for them is in terms of saturated fat, simple carbs glycemix index etc.

I mean I know things like gulab jamun are bad in every respect except one..and that is, they are so damn tasty when made right. but a lot of other desi foods..

like think about it, when u go to desi events..in majority of the cases can you go and eat there and eat healthy..I think it is tough

No, you can’t eat healthy at desi parties. Today we were at a potluck dawat:

  1. Biryani [hi in carbs, some protein]
  2. Naan [hi in carbs carbs and nothing but carbs]
  3. Cholay [carbs again, some protein]
  4. Mutton korma [bad fat, protein but fat fat fat]
  5. Chicken and bell pepper [well made, lowfat]
  6. Aloo gobhi [carbs, low fat]
  7. Seekh kababs [low fat, hi protein, lean beef, made by moi]
  8. Raita [good, hi sodium though]
  9. Orange chicken [deep fried chicken in a fat based sauce.]
  10. Pasta [hi carb, hi fat Alfredo sauce]

So we had hardly 2 low fat options.

well I am no carb enemy a la atkins but we have to really look at the glycemic index, and with the refined flour for naans and white rice, we are on the wrong foot before we even add anything else to the plate..and the ghee cooked qormas are just killer.

we need to be doing more complex carbs, lean protein, and use better fats, and I think desi food has enough flexibility that it can be done if ppl just want to do it. whole grain naan, food made in lesser and better oils, better veggies selection etc etc

Yes, desi food has a lot of scope.

We have many ingredients that can enhance the flavor without having to use much oil. One thing we could do is not cook out food to death thereby destroying the essential nutrients. Why can't we keep the veggies crunchy and al dente instead of mushyfying them all until they aren't recognizable. The meats...we could use grilling to our advantage instead of converting everything into a greasy salan.

The other thing that is quite unhealthy is the browning of onions, then crushing them for the color and flavor in salans. So much oil.

cant onions be browned by baking? never done it myself but wondering..

as far as salans i think if its better oils and less oils we should be okay, things like chicken jalfrezi or qeema with bellpepper etc u know.

and we dont have to make foods all healthy at the expense of taste, so if sauteed inions are needed fine, so be it, but then lets see where else we can balance things out.

what are some good desi food items? I suppose lentils unless they are daal fry are pretty good,
things like qeema filled shaljam too, or qeema filled bell peppers, palak gosht is superdesi food in my view..same for timatar gosht, saags, and shaami kebabs, cuz they are lentins and meat right?

I made brown rice khichree last year, it was great, not sure if others make it.. desi in general are anti brown or wild rice :D

My MIL makes this awesome whole wheat daliah (porridge) which can be used in place of rice. SO you take a tablespoon of oil, put some garlic and ginger, salt and the wheat, cover with water and boil, then cook on low until tender. The consistency is like porridge. have it with daal or salan. It's amazing!

Yup haleem is great and kids love it. barley, lentils, meat...good stuff.

Even our chaats...without the "papri" which is deep fried refined flour. But like cholay chaat, or even better, black cholay chaat...pretty healthy.

Even yakhni pulao if made the right way is nutritious.

Any kind of daal with , bhagar of olive oil piaz , zeera is good low carb , low fat , high fiber choice. you can mix some boiled rice or eat it with phulka chapati. Again consume more of daal and less of rice or chapati.

well I have used both... I think whole grain wheat is suppose to be better... i am not sure.

mostly whole wheat does refer to whole grain, but you have to be a little carful and make sure that whole wheat is indeed whole grain.

what amuses me is when they say made with whole grain and then you look at fine print at 25% is made with whole grain.

packaged food labeling is very crooked, so be wary

^ I don’t get it..can you please explain the difference? I mean if it’s 25% whole grain what’s the rest 75 percent? :konfused: Is it a US thingie or happens overall?
