They only successful desi fast food joints I have seen are those which sell Arab/Mediterranean foods.

True. Just selling desi food will not draw enough of a crowd to be successful. You'd have to have it with some combination of other food(s) too: Arab, Turkish, Malaysian (chicken satay)!, etc.

It would be small and not too fancy because everything would be home made that morning. I would like to serve students and young professionals and would only be open between 11 and 3 because I want to go home in the evening.
customers would have a choice of plain rice or naan. Then chose between a lamb curry, chicken curry, vege and daal. Of course they can chose more than 1 but that costs a little more.
There would be a salad bar which would also have achaar and raita available.
I would also sell drinks and ice cream.

I have seen some desi fast food spots...there's one in a mall in Boston I went to and I think I saw one in GA too. So far, none in Chicago...OHHH...I think there's one in Chicago now too actually. But I don't remember for sure.
