There are so many of them around ... curry in a hurry (yes, it already exists), grill it up and tandoori something in our local mall. they serve combos like 2 curries with rice or naan or 1 curry with rice or naan & steak, bbq chicken etc etc ...
What I have always wanted to see is a desi fast food joint selling just the fast food ... Like chapli kabab burger with masala fries and a drink, shami kabab burger with fries and a drink, tandoori chicken roll, seekh kabab roll, aalo ka kabab burger, samosa bun etc etc. basically just burgers/rolls/fries/drinks ... i don't know about the name (not very creative) but i do want to someday open a desi burger place ...

I don't know abt you guys but I am tired of seeing the same concept over and over again in N. America. The whole rice/naan with 2 curries and the curries look like days old :( ...
I would do something along the lines of paratha rolls, dahi baray, bun kebabs, french fries with a desi touch, chat papri, punjabi samosay. (Pakistani street food vendors)
And I would do chicken tikka but different from what I have seen (Most N. American food joints have chicken tikka marinated with yoghurt, I would do it only with lemon juice, butter and masalas)
One of the best foods I had was on Devon Street in Chicago :) Ahhhhhh .....loved it..

curry in a hurry is a trademark already.
As far as food goes, it has to have a combo of things that are different enough from greek, middle eastern type things that may be around that people want to try it instead of that, and yet have some items similar enough that its not a completely unexpected thing where they have no idea what is what.
kebab rolls, bun kebabs, samosas, desi meat patties, chaat, stuffed parathas with diff types of chutneys
if you are doing the standard 2 or 3 entree plate , have plain rice, pea pulao
rotate the entrees, but do a couple of veggie, couple of chicken and a couple of beef/lamb
you can also go in a diff direction and do desi chinese, like bombay chopstix etc who have been doing very well.

I have never had khaosay anywhere aside from home. One other family I know makes it but thats it.
No restaurant serves them that I know of.
So...this place would only be open for breakfast and lunch. Breakfast would include our usual parathay, anda, poori, halwa, aloo ki tarkari, etc.
For lunch, it would be khaosay with a huge bar of toppings and thats it.

Please teach me how to make khaosay!!! I’ve only had it once, but my husband grew up eating it always reminisces, I’d love to surprise him one day!!

Khaosay are pronounced “khao” (as in khana khao) and “say” (just like you would say the word in English).
Its an interesting layered dish - anyone who knows me also knows I love this stuff. My family is crazy about it too.
Basically, you start with a bowl of noodles (typically egg noodles but lots of people use plain old spaghetti noodles). The next layer is a coconut curry sauce. The next layer is meat or chicken or both. Some people put the meat in the curry sauce. We don’t. The funnest part of this dish are the toppings. There are so many of them and they add texture and flavor to it. You can have chopped or fried onions or both, chopped egg, green chilies, cilantro, dried prawns, red onions, red cabbage, ginger, crunchy stuff, lemons, limes, etc etc etc.
I shall post it! Its time consuming but easy.
