Re: Desi delicacy

Arabs already do something like Haleem, Pulao, kebabs etc. In fact all these dishes originated there and were brought to South Asia through Arab/Turkish conquests. To me, these are basically Asian variations of fundamentally Arab dishes.

I’m trying to think of dishes that have native roots and tradition. I could be wrong but lets have some guesses.

I’d say mithai is a signature South Asian delicacy, especially moti choor ka laddu, besan ka ladu. They have a very native character. I’d also put jalebi and ras malai in the same category as well.

Paye (or siri paye) is a South Asian delicacy. No one makes paye like us. lol

Poori halwa is almost exclusive to Pakistan (or Indian side of Punjab). In India I believe pathoorays, are slightly more popular than that beautifully layered, soft, stretchy think deep fried pale pooris you get in Lahore and elsewhere.

Gol gappay is another personal pick for me.

Uff I’m getting hungry now, need to leave this thread.

Re: Desi delicacy

Halwa poori and channay- I can eat that any time of the day.

Re: Desi delicacy

Qorma! Well made mutton badami qorma is a true desi delicacy.

Re: Desi delicacy

simply no. halwa-poori isnt from punjab, its a very standard UP breakfast dish. and poori with savory sides is ubiquitous, and extend further east to bihar and bengal (where it gets smaller and is called loochee).

bhatooray aren’t usually seen outside of punjab and delhi region.

Re: Desi delicacy

The kind of breakfast poori you get from Lahore, I’ve never tried in any Indian restaurant. I know they do pooris but from my experience, they are significantly different from the breakfast pooris they make in Punjab.

I don’t think in whole of South Asia, which is a massive and extremely diverse, there’s only one type of poori.

Re: Desi delicacy

I think Nihari is exclusively pakistani dish. I have several Indian friends who had never heard of nihari until they met me.

Re: Desi delicacy

Errr…no. Nihari’s roots are from the Old Delhi and the nawabi kitchens of Lucknow/UP. The Mughal empire of the late 18th century are renowned for nihari. Hyderabad India is also known for its nihari.

Re: Desi delicacy

I would love to read more about the origins and roots of desi dishes. Is there a book anyone knows about?

Re: Desi delicacy
