I read in one of Bano Qudsia’s books that ’ If Kashmiris didn’t waste their time in making foods like Shab Daig, they could have got Kashmir free decades ago’
Different cultures have different cooking styles. In some cultures like in Sindh, simple recipes are common which don’t take much time. I don’t remember any Sindhi dish which takes more than 2 hours time to cook. Whereas Shab Daig (name says it all) took complete night for cooking.. same is the story with Haleem, hareesa and Paye.
How do you think these cooking styles reflect the culture of a particular area? Does that show abundance of free time or prosperity of the inhabitants?
Do other cultures have dishes like Shab Daig, Paye, etc, which take hell of time?
Why not american barbecue dishes takes lot of hours .....like 8 to ten hours sometime more than it....
I am more amazed by similarity between cuisine of different cultures ....e.g.noodles they are used from italy to japan...
Dumplings are made in pakistan as well as china and japan...
roti is common from mid east to india....
sarson ka saag itna samai nahi leta pakny main, humary haan banta hy sarson ka saag lasi vich tay makkai di roti, par yeh sab bannay main bhi 10-12 ghanty nahi lagty.
wo wala cactus ka saag hi hoga NH sahi kah rhy hain.
If we want to eat something which we really like then it is not useless to cook it,whether it takes more time,
acha khany ky liya food ko importance dena zrori hy.
True.. but in some cases, I found that many important things get ignored behind these cooking habits. Khatoon e khana remain busy in kitchen and other responsibilities including children are not given required attention.
Husband ki farmaishain pori karny ky liya achy achy khany pakay jaty hain to husbands ki bhi responsibility hy ky bachy sambhaly jab khaton-e-khana khana banany main masroof hon.
who cooks daily those dishes which takes more time in their preparation.
Even 2 hours to cook a single time meal which will be down the drain within 2 hours is a total waste IMO.
8-10 hours is just over the limits.
People can be a lot more productive during those hours.
Its amazing what the Bohra community did with a community kitchen. Here is a part of the article.
On a serious note I like that approach... I've observed that now in rural areas, in most of the joint families where there are 3-4 brothers, although they share the same roof, but there kitchens are separate. An approach like Bohri community can atleast be followed in such families for time saving.
