Cooking gurus -- a besan halwa issue

I can’t seem to figure out what I’m doing wrong in Mahru’s besan halwa recipe, but since the last few times I’ve tried to make it, it ends up turning into goo. The first couple of times I tried it, it turned out perfect. I’ve tried changing the besan brand a couple of times, but no luck. Does any of you expert cooks know where I might be going wrong?

Here’s the recipe I’ve been using:

Ingredients:
Besan (Gram Flour) 1 cup
Milk 1 cup
Sugar 3/4 cup
Cardamom powder 1 tsp
Pure ghee 1/2 cup
Almonds or Cashews or Pista 10 or 15 finely chopped

Method:

  1. Heat ghee in a thick pan or vessel prefer copper bottom.
  2. Now add gram flour and keep on stirring on low flame until the flour turns golden colour.
  3. Then add cardamon, milk and sugar.
  4. Keep on stirring the mixture until the mixture turns thick.

It seems ok up until I add sugar. As soon as I add milk, it instantly gets absorbed, and the whole mixture turns into this yucky goo. Any ideas?

Maybe you are not bhonafying it enough.

You better make channay ka dal ka halwa! That's far more yummy!

I AGREE with mostar,,chanay ki daal ka halwa is the best,,,,,dont put milk in halwa,,,

try this,,Ingredients : 500 grams basin (gram flour) , 250 grams icing sugar , 250 grams ghee , 100 grams blanched almond, roughly chopped , 100 grams cashew nut, roughly chopped , 50 grams unsalted pistachio nuts, chopped , 8 green cardamoms seeds , 1/2 teaspoon ground cardamon , 4-5 silver leaves (chandi varak).

Instructions : 1. Heat ghee in a heavy based pan over low heat. Add cardamom seeds and baisin. Stirring all the time, fry these for about 1\2 an hour or until it is brown in color (fry the baisin on low heat, otherwise it will burn ). 2. Add the sugar, almond, cashew nuts, pistachio and ground cardamom. Mix well and stirring frequently cook for 10 more minutes. Spread evenly in a tray and leave it to cool completely for several hours or preferably overnight. Cut into squares or diamonds. Decorate with silver leaf and chopped nuts, if you wish. Store in an air tight container. 3.Serve with Green Tea. • Serves: 6 People. • Preparation Time: 15 minutes. • Cooking Time: 25 minutes.

are u sure its reguler m,ilk not powder one.and its better to pm Mahru and ask about it,i naver tried that
i made a ssoji basin halwa and its best halwa.

Lusi & Ira, I'm pretty sure I've been bhooning it long enough. I guess I'll try one more time and bhoon it for even longer.

Mostar and Married NY, I don't think I've ever had chanay ki daal halwa. I'll try it. Thanks for the recipe MNY.

aaish, I'm pretty sure it's regular milk cuz the first 2 times I made it from the same recipe, it turned out great.

Okay while on topic, can someone tell us what's the proper method for packaging and shipping food items like halwa? Assuming it will take 3/4 days for FedEx to make the delivery? Do you freeze it and send in a box of dry ice? JazakAllah.

Peshow...seriously? This is so unfair. What recipe have you been trying? What I find weird is, I used the same recipe twice and it turned out great. But since then it's been this problem.

Honestly cb jaan, I’ve never tried making besan halwa, but I know with suji you have to brown it slowly and then add all the other ingredients. I’ll ask ammi tonight and see what she says.

In the meantime, make kheer instead. :flower1:

Scarebear, i thought we discussed this before. I can’t do that to your tastebuds. Now kindly get back to work and try to figure out what’s wrong. I am lil worried now. What if you lost your touch and can’t cook anymore :yikes: ? I’ll have no use for you then :frowning:
