RV, it was practically impossible for me to cook 4 curry trays on stoves with my small cooking pots. So I marinated the chicken in light yogurt based masalas a day before. When baking, chicken leaves water, you just have to thicken it up and not dry it completely.

How did it go? We have to do the same tomorrow inshallah for our masjid. They also told us to bring food for 60 people.
we are new to Houston , they have lot of desi restaurants from where we can buy all we want but we want to give it a personal touch by making some items ourselves.
We have gone to a masjid near our home for last couple of weekends. They do not serve buffet style. They do it old fashioned way they spread the dasterkhawan on the floor and serve small portions in disposable plates. People can ask for more if they want to and some do. I am providing all these details so that I could get the right advise.
So look at the following and advise.
Our iftar menu is
Qeema samosa,
Aloo Cholay
aloo piaz pakoray
Khajoor ( one big box)
rooh afza 2 bottles
Cantaloupe or fruit salad how much?
Dinner:
Chicken 65, home made ( do not know how much chicken to buy)
Swaad’s plain parathas (80)- are they enough?
One big tray of goat pulao from a local restaurant - Is it enough?
Firni( home made) how much?

When I make Chicken 65 for about 30 people, I use 7 lbs of boneless chicken thigh meat

I sponsored iftar through islamic food pantry, so I don’t know exactly what setup the masjid follows where our iftar was delivered. I was however told, the quantity was enough and some families even got to take some food home for sehr.
Since, you have lot things on your menu, this is what I will suggest.
Make 2 small trays for the iftar items. One for men’s side and one for women’s.
Samos’s… 1 /person.
Don’t you think making/cooking 80 parathas is lot of work since you are making everything at home?
For chicken 65, I would suggest use khatti’s estimate. Make 2 trays with 5-6 lbs in each.
Parathas or naan around 35-40 cut in half.
I think one big tray feeds around 30-35 ppl, so go with two trays. ( I am assuming rice is your main dish).
Firni…2 small trays, one for each side.

Mirch, I think the overall menu is good. I have only 2 suggestions. You could add a veggie dish for dinner as well and add a simple raita and salad to round out the dinner. For iftari, I prefer fruit chaat to cantaloupe, but if you’re on a budget…serving only cantaloupe will be good too. If you don’t want to do a veggie salan, that’s fine…you can just add salad and raita and you’re good to go.

RV, fruit chat is lot of cutting especially when pretty much everything is homemade IMHO.

In addition to that we had made chutney and raita for Pulao which was catered by a local restaurant. We had two three trays if this size of each item.
Alhumdulillah it was all enough and well received.
