Chicken Chaat

Ingredients
1 boneless chicken breast
1 tsp. salt or according to taste
2-3 cloves of garlic (Lehsan)-chopped
2 tbs. cooking oil
1½ tsp. coriander (Dhaniya) powder
¼ tsp turmeric (Haldi) powder
¼-1/2 tsp chili (Lal Mirch) powder
1 ½ tbs. lemon juice
A few fresh coriander (Dhaniya) leaves chopped for garnish

Instructions
Wash the chicken meat and cut into 1-inch pieces. Heat the oil in a frying pan and add the garlic and salt. Fry the garlic till it is light brown. Add the chicken pieces and fry for 5-6 minutes stirring constantly. Then add the dhaniya powder, haldi and chili powder. Fry for another 3-4 minutes stirring frequently and check to see if the chicken has become tender.
Remove from heat. Add the lemon juice and garnish with fresh chopped dhaniya leaves.

Queen Mother Cake

line a baking dish with foil
pour a cup of boiling water over a bowl of 4 oz chopped dates, 1 tsp bicarbonate of soda; mix together and let it stand

6 oz sugar
2 oz melted butter
6 oz sifted plain flour
half large cup of chopped walnuts (reserve some)
1 beaten egg
1 tsp baking powder
1 tsp vanilla essence
1/2 tsp salt

mix together and add to date mixture stirring well. Bake for 35 minutes in a moderate oven

topping:
8-10 tbsp soft light brown sugar
4 tbsp butter
4 tbsp cream
mix and boil for 3 minutes; spread over cake and decorate with reserved nuts

Cream Chaat

8 oz cream
1/2 cup milk
4 to 5 bananas
1 to 1 1/2 apples
5 tsp sugar
1/2 cup grapes
1/2 cup pineapples (without syrup)
almonds to garnish

In hot water add apples, banana and lil sugar for better preservation. Take out and dry a bit......Mix the ingredients

heavy whipping cream
evaporated milk
condensed milk

mix in equal parts and add nuts of ur choice. Freeze for one hour and put wooden stick inside. Kepp on freezing til done.

1 cup nido
1 tsp baking powder
1 tsp flour (atta)
1 egg
1 tsp oil

Mix above ingredients (gundo) and make small balls

Sheera

2 cups water
1 cup sugar
elaichi

take balls and fry them about 1 minute; when they brown put in sheera

waldorf salad

1/2 cup mayonnaise
apple
grapes
walnuts (crushed)
1 tbsp cream or some milk
boiled macaroni (1/2 cup unboiled)
cabbage
black pepper
salt
sugar

boil macaoni and add everything. mix and chill

CORONATION CHICKEN
5 or 6 chicken breasts - med. size
1 tbsp. olive oil
1 sm. onion, peeled and chopped
1 tbsp. curry powder (use this to taste)
1/2 c. chicken stock
1 rounded tsp. tomato puree
Juice of 1/2 lemon or tbsp. of lemon concentrate
2 rounded tbsp. of apricot jam or sweet chutney
1 c. mayonnaise
3 tbsp. light cream

Method:
Put chicken in a pan with a little water on bottom and roast in oven covered with tin foil until tender and cooked.
Sauce:
Heat oil, add onion, and fry until soft. Stir in curry and cook a few minutes only. Then stir in all ingredients, except cream and mayonnaise, and bring to a boil and simmer for 5 minutes. Thoroughly cool sauce and only then put in cream and mayonnaise and mix well together. I always double the sauce recipe because it is very good and the chicken should be well covered. Skin and bone the chicken and slice into strips. If I am serving it the next day I put sauce and chicken in separate covered containers in the refrigerator overnight. I put the sauce over the chicken just before serving. Chill well before serving if you serve it cold. If you serve it hot, do not leave it in the oven longer than it takes to heat it, and heat it covered. Serves about 10 to 12. Good cold with salads or hot with rice and chutney. Enjoy!
