Okay I don't want to drag this thread out any longer but I HAD to update:
About half an hour before everyone was meant to go out for their drinks, every single computer in the building stopped working, plus computers in our organisation in couple of other buildings too - network was down, and no one could do work. So I got to go home early after all.

Awesome Maddy your problem is solved!. But for a side note, if you think that bunch of drunks would bother you in pub and makes you uncomfy so by any means..it was good decision to stay out.

well done for not compromising your morals..
so whaat if she didn't go?!! LOL seriously some people dislike being around alchoholic environments and make it pretty clear that tthehey will socialise when it comes to dinner/cafe's for work purposes but won't go beyond that. Thank God all my colleagues know this and respect it pretty well..they invite me to social gathers which don't involve alchohol and they understand.
Your morals, other people should not force you and you should not feel pressured to 'smile' for a bit and sip on your juice just to fit in!

I really do feel like someone was looking out for me because I didn't want to give in, even on the day everyone was saying 'I know it's not right but just come along with us anyways', so I was just relieved that I didn't go in the end!!!

As far as mature girls..well that is my personal preference. I like to have intellectual convo as well…that is why coffee is awesome place to have these convo.

This may be a different case but im a student on a work placement n i was invited to the xmas-do which consisted of getting drunk etc.. All i se to them was 'nope sorry i think theres an issue of proffessional boundries by me going' lool i got awayy wid it playin the student card :D

I do not drink beer just wine though. When i invite my Muslim girlfriends for christmas dinner i make sure i do not drink wine at all. Mainly because i personally respect their beliefs. So in essence, you made a good decision by not going to party. Me no like pub anyway also.

The differences are so unclear for a gathering at a pub that also serves food versus a restaurant which also serves drinks...if people are going to drink, they will drink. so if being around drinks is an issue then a restaurant should be a no no as well. in the end if someone is at a place for an hour it is really no different.

This reminds me of the time one my TAs at work offererd to buy me a drink, I said I didn't drink alcohol so she replied 'but im only going to buy you wine.'

I think you are already realizing this is much fuss over nothing. As paheli says "you have to learn to pick and choose your battles. Fight the one's the really matter. And in my humble opinion....this isn't one of them."
Do not compain about this to your colleagues, dont let anyone know you are upset. Be prfessional. Do not burn bridges.
If you cannot be flexible enough to hang with the team at the bar drinking orange juice, then do as requested. Your manager is doing team building as he sees fit. He may be breaking the letter of the law - I am not a lawyer. In my eyes, he is not breaking the spirit of the law.
Be a team player - you will gain some respect from your colleagues.
