Re: Chocolate Lava Cake
This is Gordon Ramsays Recipe and i have made it 3 times and it went really wrong the first time but really well the other 2.
ANyway this recipe makes 2 Fondants.
Ingredients:
-50g unsalted butter, plus extra to grease
-2 tsp cocoa powder, to dust
-50g good quality bitter chocolate (minimum 70% cocoa solids), in pieces ( i used 50% solids as i dont like it tooooo bitter, dont use milk chocolate though!
-1 free range egg
-1 free range egg yolk
-60g caster sugar
-50g plain flour
-Icing sugar to dust
-Vanilla ice cream to serve ( or any other yummy sauce or custard!)
1) pre-heat oven to 160degres celcius
2)Dust 2 large pudding containers (7.5cm diameter)
3)Slowly melt the chocolate and butter in a small bowl over a pan of hot water ( not boiling) then take off the heat and stir until smooth, cool for 10 mins
4)Using an electric whisk, whisk the whole egg, egg yolk and sugar together until pale and thick, then fold in the chocolate mixture. Sift the flour over the mixture and gently fold in
5) put into containers and cook for 12 mins
Tip onto a plate and decorate with fruit, icing sugar, ice-cream whatever you like really!
Re: Chocolate Lava Cake
I have a similiar recipe as alvena. Its not hard to make and is delicious. Make sure to use a good quality chocolate like Ghirardellis. I too dont like bitter chocolate so i use milk chocolate with less sugar in the recipe.

i dont remember all of it but here are some of the things we had:
-braised Ox Cheeks with horseradish mashed potatoes
-Chilled Cherry Gazpacho
-prawn, lobster risotto
-Tiger prawn ravioli, creamy fennel purée, deep fried basil and a light lobster bisque
-Crispy veal sweetbread, orange and chorizo compote, maitake mushroom
-Scallop carpaccio (very good--fresh and tasty)
-Foie gras
-crème fraîche dessert. There was quince at the bottom, ice cream and crème fraîche.
-dark chocolate with olive oil gelato and coconut foam
i cant remember there was more stuff cuz my husband got a bunch of things too i just cat remember.
IT WAS AMAZING tho.
Re: Chocolate Lava Cake
OoOo Alvena, I had the chocolate fondant with milk ice cream at one of Gordon Ramsey’s restaurants in London, and what you’ve written is the exact recipe he uses…i’ve tried making it on many an occasion but it never tastes like the one i had at his place ![]()
