take 1 cup of flour
few table spoon of shaunf
and ghur according to ur taste
Mix these ingredients and make a tin paste like pancake and oil the pan and pour few spoon of mix on the pan. flip when one side is done.

all the desi stores sell very desi and authentic gur sometimes you can even dig out a desi makhi in it. :D
Now I remember my mother used to make them. The right pronunciation might be chil-lay.

You are right on both counts.
Desi stores do sell brown sugar , it is called gur ki shak-kar or simply skak-kar in urdu and I guess in hindi also. I guess , but not sure that shak-kar is more brown sugar then the one TLK discribed earlier. As shak-kar is unrefined sugar.
