today, we gonna have goat siri paaye [cut up head parts, brain fried separately and then mixed with the paaye after it's cooked]...i remember we used to have it regularly [at least a couple of times in a month] during winter. yummy! :)

  • Chicken (3-4 leg quarters/3-4 pieces of each qtr)
  • Yogurt (⅔-1 cup)
  • Oil (½ cup)
  • Onion (1)
  • Flour (3-4 tbs)
  • Salt (1 tsp)
  • Chilli Powder (1 tsp)
  • Paprika (1 tsp)
  • Turmeric Powder (½ tsp)
  • All spice powder - Garam Masala (1 tsp)
  • Coriander powder (1 tsp)
  • Fennel powder (2 tsp)
  • Nihari Masala (1-1.5 tbs) - I used shan but you can use any
  • Ginger Paste (2 tsp)
  1. Heat oil and add ginger paste and stir for few seconds
  2. Add chicken and fry for 2 min and then add all masalas (except Paprika) and bhoono for 5 min
  3. Add Yogurt and bhoono for some minutes till oil separates
  4. Put some water (around 2 cup) , cover and cook till chicken is tender
  5. Mix flour in ⅔ cup of water.
  6. Remove chicken from the pot and on high heat mix the flour mixture. Cook on high for a min while keep on stirring the spoon and then add chicken back.
  7. Cover and cook on low heat for 10 min till oil comes at top
  8. Take some oil from the top of Nihari and fry the onion into it till golder brown and put it on Nihari.
  9. In 2-3 tbs oil, make baghar of Kashmiri mirch (paprika) and put on the nihari (this is just to bring the color)
  10. Cover and cook for 10 min on low heat.

Chicken Nihari

Sounds good. My mom never makes chicken nihari, only beef. I somehow have this idea about beef only nihari in my head as well. I've had chicken nihari at some dawats and it never is good. The chicken "smells". I don't know how to explain that but yes. Perhaps I'll give your recipe a try one day. :-)

I tried your recipe, turned out pretty decent. I still have to work on it a bit more .. but did want to say thank you for sharing your recipe. :)

real nihari at pakistani restaurants, someone told me its made of camel meat? is it true? And you don't need to add salt because their meat is already salty? Where can I buy camel meat in Pennsylvania?
