**Wash Boneless chicken and keep aside to drain well.
Heat half cup oil in a pot .. then add a pinch of zeera seeds and methi seeds .. When they start sizzling add in the chicken and stir quickly , keep the flame on medium.
When the chicken is half cooked or changes color and browns slightly, add in one and a half tsp garlic .. stir for a few minutes then add in one and a half tsp ginger paste and stir it for a few minutes ..
then add two to three tablespoons water and immediately add in the powder spices:
Salt - one and a half tsp
Red Chilli powder - half tsp
turmeric - half tsp
Stir until oil separates .. now chop about 6-8 tomatoes or pop them in a chopper but dont make a fine paste , keep it coarse ..
After adding the tomatoes , reduce the flame to minimum and put the lid on … let it cook .. stir every 10 minutes ..
Chicken should take about 25 minutes to get done .. but after the first 10 minutes , thinly chop 6-8 green chillies and add them to the chicken … and during the last ten minutes of cooking add in two cups chopped fresh corriander …
I normally use about two cups full of chicken boneless .. husband does the packages and puts them in the freezer so I have no idea what the weight would be , but its normally 2 cups full of chicken pieces ..
and when its chicken with bones, its normally about 6-8 pieces of small pieces ..
because hubby and I like to have more masala in the chicken , we add loads of tomatoes , almost three cans of tomatoes … but if you want proper karahi taste , stick to no more then 6-8 tomatoes ..
Sounds delicious! Can I add the ginger and garlic paste together? I usually mix ginger and garlic to make a paste.
Saks , you can .. but I have experienced that when you do garlic and ginger separately , and add them after a few minutes of each other , the salan gets a superb taste ... the taste changes when we mix ginger garlic together ...
I have a question. I have tried making karahi a couple of times but it never turns out good.
Does it make any difference if we make it in stainless steel vs non-stick pot ?
Sarad, no I dont think it makes much different , what I do suggest however is if you can write down the recipe you follow and how you make it and perhaps we can point out where you might be going wrong ...

Add salt, red pepper, whole black pepper, cloves in it and cook it a little bit more.
Put lots of diced tomatoes in it.
Cook the tomatoes for a while
Add green chillies and cilantro.
I have tried the following variatons.
- I started with some onion and then followed the above recipe. I know we are not supposed to use onion but karahi was not coming out right so tried with some onion.
- Another time I did not add onions but added coriander powder along with salt, red pepper etc. Not right again.
Thanks for writing the recipe Sarad .. now one question .. what exactly do you find is wrong with the salan? is it the taste or that the ingredients dont look well combined ... its too watery .. please describe to us what makes you think the karahi isnt good and Inshallah i will point you in the right direction ...

one more thng guys .. because once the tomatoes are added , it cooks on lowest heat with the lid on .. it hardly sticks to the pan .. so dont worry too much about that aspect ... jsut stir every few minutes and when oil starts separating , it wont stick at all ...
