Please ensure you cook it long enough after adding the tomato paste .. it must reduce to a thick masala and water must evaporate completely .. werna it will only taste like a tomato-ey mess ! even after the oil separates ensure you cook it for a further 15 -20 minutes …

with my karahi the taste is not like karahi that I have had in Karachi.
Also I always cook without a cover because I thought since its supposed to be cooked in Karahi it has to be un covered. I have had karahi at karachi dhabas and thats how they serve it, in an uncovered karahi ??

sarad , you got a point regards the karahi thing .. to be honest I have hardly lived in Pakistan to taste the real karahi .. but I guess we dont have the real karahi's in the usual homes anyways ... plus the karahi they make is on high fire , chicken is almost boiled first to save on time when customers come ...
This recipe , try it , its good for home cooking , wont let you down .. the reason I have always cooked in on low heat is so that tomatoes get cooked well while the water dries ... I think in Pakistan tomatoes almost immediately disappear in the salan .. they are so soft and nice ..
here , tomatoes are freakishly tough things ... they can take a while to disappear fully ...

I will try again though after last attempt husband said next time he will make karahi and show me how it is done the right way ..... secretly I am hoping his karahi sucks as well and then I can attempt again.
