This is probably one of THE most requested recipes on this site so I am surprised I am not able to find a recipe I like.
If you guys could post a recipe you’ve tried and tested that would be good to serve at a dawat where there will be some very serious food critics present (meri izzat ka sawal hai)…that would be great!
I always use this recipe and it turns out great. I think the key to good butter chicken is broiling the chicken to get a slightly charred look and to avoid overcooking it so it stays moist. Overcooking boneless chicken always makes it so dry. I have made two changes to this recipe. I always use chicken breast and use half n half instead of heavy cream. I use about 1/4 cup of half n half instead of one whole cup.
Honestly speaking, the Shan masala for butter chicken turns out delicious..as does the 'Ahmed' masala one. The taste for both is amazing and really quick and easy- I always use these and I am a very beginner cook.

Masala bano - add tandoori chicken in it.
Garlic and basil Pasta sauce - add butter and cream and garam masala.
bro is comes out much better then anything i've had and so much easier then most recipes I've come accross.
My butter chicken is pretty fool proof, and always turns out perfect.
Step 1:
Make boneless tandoori chicken and set aside (marinate boneless chicken pieces in a little yogurt, lemon juice, adrak lassan, shan tandoori powder and tad drizzle of oil, mix well, marinate for a couple of hours then bake/broil/grill)
Step 2:
In a clear measuring jug, use one 4 oz can of tomato paste, add enough water to make 1 cup and stir well. To this add half pint carton of heavy whipping cream and stir again to combine well. Add finely minced hari mirchi, hara dhanya, grated ginger, dhanya poweder, zeera powder, garam masala powder, salt and lal mirchi. Combine well. Melt one stick of butter in your degchi and then add this cream/tomato paste mixture. Stir to combine well. Once its all incorporated, add your reserved tandoori chicken chunks, with whatever juices may have accumulated and let it all cook together for a few minutes and you're done!

@Muniya...this recipe is fascinating...lol. Garlic and basil pasta sauce? Really? I am intrigued...wondering if I should just do this. Does it taste like the kind in restaurants? A lot of places don't make butter chicken well unfortunately...:(

Now I make it like this and my friend makes it like this as well. She's south indian - to say that it appeals to every kind.

I think I'll do that...make a small batch first to see if I am doing it right. Looks so interesting.
