^ i use the shan masala packet too. i also use half and half instead of cream and butter, and i don't grill my meat. i usually pan fry it. once i have added all the ingredients and bhoonofyed it a bit, i get some charcoal and heat it up on the stove, make a foil pocket and sit it in the middle of the pot. I add a little bit of butter to it and place the hot coals immediately on the foil pocket so they simmer with the butter and this adds the yummy smoke flavor.

There has to be a less artery clogging recipe out there but so far this is one of the yummiest!
My butter chicken is pretty fool proof, and always turns out perfect.
Step 1:
Make boneless tandoori chicken and set aside (marinate boneless chicken pieces in a little yogurt, lemon juice, adrak lassan, shan tandoori powder and tad drizzle of oil, mix well, marinate for a couple of hours then bake/broil/grill)
Step 2:
In a clear measuring jug, use one 4 oz can of tomato paste, add enough water to make 1 cup and stir well. To this add half pint carton of heavy whipping cream and stir again to combine well. Add finely minced hari mirchi, hara dhanya, grated ginger, dhanya poweder, zeera powder, garam masala powder, salt and lal mirchi. Combine well. Melt one stick of butter in your degchi and then add this cream/tomato paste mixture. Stir to combine well. Once its all incorporated, add your reserved tandoori chicken chunks, with whatever juices may have accumulated and let it all cook together for a few minutes and you're done!

Meanwhile, the last time I made butter chicken, I used a packet of Rasoi Magic’s Butter Paneer Masala. Instead of the paneer, I used chicken, and holy goodness, mother of butter chicken, 'tis was the bestest butter chicken I ate in my entire life of butter chicken eating.
Followed the recipe, just tweaked a few things around.
I tried Shaan Butter Chicken Masala and it was nothing like the stuff you get at the restaurants. It was like salan and not the creamy gravy that I like!

I tried the Shan one and it's too watery... dislike it. Made my own recipe .. which was good but the tomato flavor/color wasn't there.

My recipe is thick and creamy with a very luscious finish and bright color. I've been told it's on par with restaurant quality.

For some reason I cooked it longer to get that extra thickness into it. Meaning, I allowed it to stay on the stove and watched it until I got it to the desired creaminess.
Try the recipe, your own instincts will guide you as well as to how it should be.
I recently tried Laura vitale's recipe for butter chicken and it turned out great. She doesn't use too much butter (just 2 tbsp I think) and only a 1/4 cup of heavy cream. I edited the recipe and added some additional spices. It was so good with hot naan. You can make it richer by adding more butter and cream but I thought it was great just the way it was (less guilt too)
