Though I have never built a computer myself I think I can build a desktop relatively quickly since chassis, motherboard etc are somewhat readily available - but there is no incentive to do so since the pre-built ones, even name brands, have become cheap and come with warranties.
Question - has anyone built there own laptop (particularly light / ultra-light ones) and if parts can be just as easily (and cheaply) available?

hmm interesting.. laptops are not that "open" as your desktops.. the motherboard for a laptop is specifically designed according the shell shape
so the max you would be able to do is simply upgrade HDD, RAM, replace Keyboard (?) ..
but forget about building your own..

In the begging of my career I worked in compaq in their lab, for few months.
Usually to untie mother board in a laptop you need to unscrew some where from 30 to 45 screws.(can't really remember the no. its around 30 for sure)
Screws are of so many kinds and sizes. We in fact had a whole rack with small draws for screws. there were over 20 kinds for sure.
The guy who trained me said "when you finished putting it back, and you are left with one screw or you are missing one screw: call me"
They guy him self had made a sticky surface. He will stick screws in same manner on that surface as he was taking them out of laptops. (making a map)
