Cut chicken into cubes and marinate in a few tbsps of mayo, lemon juice, salt according to taste, a good tbsp of sriracha, a few sprinkles of soy sauce, a good pinch of mustard powder and black pepper. Marinate a few hours. Then dip it in egg and panko crumbs and fry. Superdelish!!!

Oh n u can make wraps with this too if u cut the chicken in strips instead o cubes

I made stuffed chicken breast on a bed of sauteed, orange/yellow/red/green bell pepper and onion. It was a mouth-orgasm, to say the least.

I butterflied the chicken, pounded it out so it was kinda thin. Fresh mozzarella, Parmesan cheese, Italian seasoning, salt and pepper, olive oil, olives, mushrooms. Toothpick'd the breasts shut, dipped in egg then Parmesan + Panko mixture...shallow fried them to get it crispy. Placed in oven to cook through. Last 5 minutes I added more cheese on top and let it melt and brown. Warmed up some marinara/spaghetti sauce on the stove. Sliced up 3 cloves of garlic, 1 onion, beautifully colored bell peppers. Sauteed them quickly in salt and pepper and olive oil. Laid them down in the place, placed chicken breast on top, spooned marinara sauce over the chicken and served with a huge dollop of mashed potatoes.

I have a Thai recipe (not a chinese one) that I make often.

I marinade boneless chicken in some cornflour, salt, pepper, lime juice, and soy sauce (according to taste). I cut the chicken into pretty small pieces as that makes it tender wen you cook it. Marinade in fridge for an hour or so. Then I sautee my veggies. I take a lil bit of butter and some olive oil and sautee the mushrooms first....then I add diced bell peppers and spring onion and a few jalapeno peppers (I used the jar variety)....I also add (estimated amount) of frozen veggie medley (which includes corn, carrots, string beans). Saute these vegetables. Then add the chicken and stir until thoroughly cooked through.

Now for the fun part, the sauce. In a bowl, you mix 1/3 cup peanut butter, 1 tablespoon honey, 1/3 cup soy sauce, 2 tablespoons fresh lime juice, 1 and 1/2 cup unsweetened coconut milk, 2 tablespoons minced ginger, 1 and 1/2 teaspoon hot pepper sauce, 2 tablespoons sesame oil. Mix these ingredients and pour the mixture onto the chicken and veggies. Stir until peanut butter has melted and the sauce is of the consistency you like.

I then boil some brown rice pasta cuz it's healthier....and mix the chicken n veggies with the pasta when it's cooked.

Yesterday I cooked boneless chicken with pineapple rice and grilled pineapple... It was awesome!!!

smoked/bbq'ed ginger chicken:

in a pot, add 750 gms boneless chicken cut into cubes , 3/4 tsp salt, 1/2tsp red chilli powder and 3/4 tsp haldi (adjust masala according to taste),1/2 tsp zeera powder,1tsp garlic paste and 1.5 tsp ginger paste and SIX chopped tomatoes(medium sized) and put on medium-high heat. no oil here. tomatoes will do the job. cook covered and after 15 mins almost, when the water is almost dried and chicken done, add oil and bhoon on high flame. then add 1/2 cup yogurt,2 tbsp tomato ketchup,2-3 tbsp ginger julienne and cook on dum for another 6-8 mins so ginger is not very crunchy. garnish with some drops of lemon juice and fresh coriander, put a red hot piece of coal on an aluminium foil piece placed on chicken, drop few drops of oil on the coal piece and cover for 5 mins. dish out and serve with roti/rice/naan..yumm

oh 2 days back i made chicken Manchurian .it was soooooo yummyyy and sooo easy to make though i am not an expert cook at allll...
