Biryani question

When preparing layers for the biryani, do you put the meat at the bottom layer or rice?

i put a layer of rice first,then the meat and then another layer of rice...:)

^ same here...except i add a bit of the oil from the biryani masala first and then add the rice...

That's what I do too. The oil prevents the rice from sticking to the pot after its done.

I put rice first, then meat and repeating this and making layers.

You would only want to put masala on the bottom if it is a little thin or extra, otherwise go with the rice. incase your bottom layer burns, atleast you won't burn the masala just some boiled rice...lol..

I always put the meat layer first, it tastes very good. There's a very little chance of burning the bottom layer if you keep the heat low or keep the pot on tawa.

i made biryani this way, i made the chicken and masala and all... boiled rice in a separate pot and tehn added a bit of rice into the pot with the chicken masala and then mixed it and added more and mixed it more and added more and mixed it more and then put it on damm for like 8-10 minutes.

^^ On a standardized test, they don't care how you got the answer, all they care about is that you got the right answer...so as far as it looked and tasted like biryani, that is all what matters... lol

sara, speaking from my own experience, when you have just boiled the rice they're wet and if you try to mix biryani chicken masala in it without first putting on dum then there's a risk of rice breaking or becoming too soft so try to just layer them first and mix after 15-20 mins of dum on low heat.

I and my sisters always put the meat and masala first.

For biryani, one should always use saila rice (easy cook basmati rice). During dum process, they never break and gives you the perfect biryani.

I usually put the rice first & then layer with meat masala. One thing my mom does that I like is she seperately fries a sliced onion till golden brown & adds zeera at the end for a quick sec. She adds/sprinkles some of this onion/zeera mix in between layers for scent n taste. Also she takes about 1/2 cup of yogurt whipped with some milk (or coconut milk) and adds tandoori masala to it till it turns orange. She drizzles a little between layers. It gives you a nice color plus flavor. (kind of like how u may color rice in matangan)

Surely it depends on the TYPE of biryani you are making? Different biryani's call for different methods.

Guys I want to make mutton biryani, can someone please tell me how? Do I just cook the mutton as a usual salan and then make layers with rice and put on dum? Thanks!!
