Regular salan is good with mutton. Punjabis and Kashmiris don't like beef that much. We have the best beef in the world here.

That is true. But beef is much tastier in Pakistan - at least in Karachi. Here in UK it is not that much tasty.

Mutton is def more popular in Punjab. No one really loves beef, which boggles my mind. I think it has to do with the type of cuisine in general in Pakistan. Beef is always used in low heat, and slow-cooking recipes (nihari, haleem etc). Very few Pakistani home cooks really have a concept of rare meat, or good cuts of beef. If it's even slightly pink they'll go crazy lol, and not to mention how juicy we want steaks to be... I remember my BIL got a cut of beef called the silverside (it's used in pot roasts, and other really long, slow cooking methods) when I was in Pakistan. However, it was sliced in steaks at the super-store he got it from (GreenValley) so he thought it was steak. Everyone in the house was telling me it's steak and I should rub tenderizer on it and marinate it for 6 hours and all these other horrible pseudo-chef tips that you should NEVER do to proper steak (rib eye, filet mignon etc). No one believed me when i told them that a good cut of steak is NEVER cooked in a pressure cooker, or tenderized for ages, and only needs 3-4 mins per side in a pan. And in general, in restaurants where steak is offered in Pakistan, no one asks what done-ness you want it. The only time I had an excellent medium-rare (was asked before-hand) filet mignon was at Cafe Aylanto in Lahore. That's it.

Ground beef - the avrg butcher shops have no idea how to provide it or from what part of the cow. It ends up being chock-full of gristle and bone, not to mention the crazy amount of fat. Proper butchers from nicer areas tend to do well but it's hard for people to access those. And finally price - beef is more expensive. Better to go for chicken or mutton, from a financial perspective.

In the West, beef is used in steaks/kebabs as well as pot roasts etc. So the knowledge and technique of cooking it varies a lot more. I love beef.

You cant really do steaks with desi meat, here they age it for 21 days to be tender and back home you are eating it while the animal is still twitching. If the animal is not stunned there is a lot of adrenaline and rigor mortis to deal with. Cheap meat you can do finger steaks. There are many ways to cook meat. I love Korean bbq. They slice the meat real thin and hence cooks really fast. I ate steaks for breakfast today. I like steaks on bbq or if I pan sear I finish it off in the oven.

Also most desi home cooks don't know the difference bw grilling, searing, simmering, steaming, roasting, sauteing, frying, boiling etc. Temperature control is crucial to cooking and the concept of resting and tenting the meat.

Beef is considered unhealthy in Pakistan esp. in Punjab.

I eat lots of beef, my wife tries to pry the big T Bone out of my mouth and I eat lots of eggs also and MA I just came back from doc and my cholesterol was fine, as long as you limit white carbs and eat a lot of veggies then beef is fine. A steak has only 400 cal same as half cup of rice.

Punjab main ajj bhi Biryani kay naam par Pulao hi bikiti hia... jisay dekh kar dil khon kay anso roota hia... steak phir kis khet ki mooli hia...

Recipes evolve, the world is changing most of our recipes are illegitimate children of Indian/Persian/Turkish/Arabic cuisine so I wouldn't be complaining about anyone else adding to their flair. Pilau biryanni is awesome. Having a lot of tomatoes and piyyaz in curry is healthier than Korma.

Biryani is a simple variation of pulao. Indians were vegetarians - Babar wrote - Hindustan kay log ajaeeb hia - anaj kay saath anaj khatay hain (referring to daal with roti)!

Biryani is as it is today is because of the English & Portuguese!

Are you as good with cooking as you are good with the history of cuisines. They are analysing teeth of Neanderthals to analyse their diets you might wanna keep an eye out on that. Very interesting findings. I say the same thing as Babar without realizing he said it first.

In fact all the delicious meat dishes were brought into the sub continent by invaders from the north. At the end of the 15th century Portuguese brought chillies from the Americas and the English introduced tomatoes to India in 1830. I wonder how people used to cook karahi before the arrivals of tomatoes.

As posted by Queer, if I remember, the long pepper or pipli used to be the main spice in India before the arrival of chilly pepper.
