hello girls.
I have a question for all of you expert chefs :) I made pizza today and the dough turned out quite stiff. I have made many times before with the same recipe but never got any issue, what might be the possible reason?
P.S Got a new oven if its of some concern..

DaffyDuck, here is my brownie recipe, its really easy:
3/4 cup cocoa powder
3/4 cup vegetable shortening or butter (shortening i think makes them softer), melted
2 1/4 cup sugar
4 eggs
1 tsp vanilla extract
1 1/4 cup flour
1 tsp baking powder
1 tsp salt
1 cup walnuts (optional)
mix the melted shortening/butter with the cocoa until incorporated. add in the sugar and vanilla until mixed. add the eggs in, one at a time until mixed well. in a separate bowl, mix the salt, flour and baking power together, and then dump this into the wet ingredients and mix together. add in walnuts last and just mix until distributed in the batter. if you want fat thick brownies, pour this into a square 8 or 9'' pan and bake for 35-45 mins (depends on the oven). ive made this in 3 different ovens, sometimes it took 35 mins, sometimes 50 mins. its very very variable.
oh sorry bake at 350 F :p

if you just want to use egg whites in a cake, just buy the carton egg whites in the grocery store. If thats not available, if your making a cake, just use the egg yolks to make french buttercream, which uses several egg yolks in the recipe.

^ Yes u r right, my daughter wants castle cake for her birthday so we are searching in youtube for some ideas then we saw this one, we liked it then I tried the same and this is the result, everybody in the party loved the cake.

Guac , pls share recipe of your lemon pull apart cake. It looks awesome. Also how did you make the butterflies, they look beautiful

Thanks! My sister made the butterflies, she used candy melts. So basically she drew the butterfly halves onto wax paper and refrigerated them and then once they were cooled pulled them off and we added them onto the cupcakes. Since they are heavy we added a chocalate chip under each wing for support. For the inside colored part we mixed some food coloring with white candy melts. Hope it makes sense, if not please let me know.

I made my own red velvet cupcakes with cream cheese icing and plain white cupcakes for a bake sale at work. They turned out really good.
I was not happy with the cheese cream icing. It is really hard to decorate with this type of icing cause it melts really fast. You can only put a tiny bit of icing in the bag at a time cause your hands will warm it up and melt it. I iced the cupcakes 2 days in advance and just let it sit in the fridge and take shape.

Dear pro bakers of GS,
Can someone pls share a fool fool proof recipe of sponge cake. I am not a beginner and most of my baking turns out decent (but then again I use Dorie greenspan's recipes)
I have tried two recipes so far and the first one was great on the day baked except that it had a not so soft exterior, it was hard even on the sides but it gave me two cakes.
The second recipe I tried gave me one cake which did not rise much (my baking powder is fresh) and also it was sort of hard first day of making it and serving. The second day it just melted in our mouth and the taste was much more pronounced as well.
I tried both cakes for a Victoria sponge cake and would love to make it again (one of hubby's fav cakes) but would like a sponge cake recipe I can't go wrong with. Thanks in advance.
