Tacos are fun. I prefer the soft ones.
Dessert assembly line…like for ice cream. And stackable desserts.
Crepes, since they are similar to soft tacos, could also have an assembly line of sweet and savory fillings.
Pizza assembly line. I guess this one would be more popular with but adults can have fun with it too.
Apart from burgers, you can do an assembly line for a variety of sandwiches. Paninis would be fun.
Wondering if a pasta assembly line can be done; just crossed my mind. 
Maybe if it’s one type of pasta…with different types of toppings of various flavors (Italian, Chinese, etc)…or more than one type of pasta.

Quiches also come to mind. Tarts. Pies. Maybe with small, premade shells…and an assembly line for toppings/fillings.

Cheese, onions, tomatoes, lettuce, pickles, relish, ketchup, mustard, etc.
For sides…chips and salad.
I can’t seem to find any deer meat in Chicago for burgers though.
