Karahi masala: It is mainly without corriander powder. Some people add methi leaves in it and mostly crushed chilles are used instead of powder: Mine is curshed chillies, tumeric powder, garam masala powder and methi leaves.
Qorma: Haldi is missing from it. The mixture should be chilli powder, dhaniya powder, jaefel jaftri zeera suffed illahi powdered. Whole garam masala including sufeed illachi but missing the lal illachi.
Nihari: Only red chilli powder, zeera powder and saunf powder.
Paya: Chilli powder, dhanyia powder, garam masala powder and haldi. And little bit jaefel jaftri.
Curry or salan: Same as paya except jaefal and jaftri powder.

Qorma: yougurt: in chicken qorma no water, in beef or mutton some water
Nihari: yougurt: water yes
Paya: Nothing: lots of water
Curry or salan: either yougurt or tomatoes. Water yes.
