What I do is fry sliced onions, add some masalas, and cooking cubed potatoes..cover on low heat and when cooked add potatoes and scramble… we just call it anday aloo ![]()

The dry type is the bhujia, not salan...salan is usually with shorba.
Khageena doesn't usually have potatoes but the recipe is pretty much what Sara wrote with the addition of tomatoes.
Recipe for the salan I made:
5 hard boiled eggs
2 Yukon gold potatoes, peeled and cut lengthwise
1 medium onion sliced
1 small tomato
1 tsp tomato paste
salt
chilli powder
1 tsp dhaniya powder
1/2 tsp haldi
4 cloves of garlic
1" piece of ginger
fresh cilantro
1 bari black elaichi
3-4 cloves
1/2 piece of cinnamon stick
Fry onions until golden. Remove with slotted spoon and put into a blender. Add tomato, tomato paste, all spices [minus the last 3], garlic, ginger and some water. Grind into a paste. Add the 3 whole garam masala into the same oil and pour the ground up masala from the blender. Bhuno until oil separates. Now add the potatoes and the boiled eggs. Bhun until egdes of potatoes start to brown. Add enough water to cover. Lower heat and cook until the right consistency is reached and potatoes are tender. Sprinkle with cilantro.

i make anday aloo the same way. makes a yum desi nashta with paratha on a weekend. Have made it for dinner/lunch too at times ![]()
Am going to make the potato egg salan today following niks appi’s recipe. I thought I had lamb cut pieces in the freezer but when I just opened it I realised I had useed them earlier
Otherwise today’s menu would have been arvi gosht

I never tried anday aloo before I got married. I tried it after my husband said its a dish. I didn’t even know it existed. We made it couple of times and we enjoyed it but I think we just don’t like it enough to keep making it

Ohhh I loveee this salaan we add peas into ours too.
I make mine like this.
Fry a few methi NOT MUSTARD seeds in some oil. Blend onion garlic and ginger into a paste. Fry that in the methi and oil, add namak, haldi and lal mirch, fry the masala and bhoon add tomato paste and bhoon, add potato, peas and fry in the masala, add some water and simmer until the aloo is almost done. Add in boiled eggs, some green chillis and cook for further five mins and then add corriander to garnish.
