I (my mum) make ours pretty similar too: after adding a little oil into a pan, we add chopped onions, zeera(?!!) and garlic. When slightly browned; we add chopped tinned tomatoes, haldi, laal mirch and salt. Once the masala has ‘phoon’d’ a little, we blend everything together in a food processor. After we pour the contents back into the pan, we add the potatoes and water. Once the potatoes are cooked…6 boiled eggs are added (there are 6 of us :silly:). We finish off with garam masala, a few chopped green chillies and corriander.

Has anybody made, aloo ganday? It’s basically fried onions and scrambled eggs.

we make both type and both r called allu andey. last time i made the dried version about 2 months ago and my husband said
" kia baat hey aaj kal pakana chore diya hey?"

and now i want allu andey :).
