I have been making up recipes lately! LOL…most of my cooking is spur of the moment so I use whatever I have on hand.

I don’t have pictures but I made soy sauce fried chicken breast and mayo chicken breast and they were GONE before I could take a picture :cb:

Next time I am taking pictures!

i use the chicken for the stock to cook rice and marinate it later...Have always followed this recipe, its my mum's ,its yummy lemony flavour i make it for get together's on demands

take one whole frozen chicken (skin on cut it from centre) n bring it to boil by adding 2dried lemons(the black ones) 1 cinnamon stick 1 table spoon corinder seeds 1 table spoon cumin seeds 3 black cardamoms 7-8 pieces of whole black pepper 5-6 pieces long pepper 2 pinch of turmeric n salt ones the water starts boiling boil it for good ten minutes. remove the chicken and sievethe stock/broth.
save the stock/broth for rice.
cut chicken into 4 pieces with skin on and marinate it - take one lemon cut into two halves. add the juice in the chicken . in a small bowl add teaspoon salt 1 teaspoon red chilli powder half teaspoon of blended ground spices(garam masala) mixx and add to the chicken u can rub the lemon (which u cut into two halves) in the mixture and apply on the chicken. keep it for 10-15 mins
meanwhile for rice if u r cooking two glasses of rice take 4 glasses of stock - 1 glass of rice two glasses of stock ...bring to boil - (check the salt in the broth and adjust it at this stage)
cook the rice ones almost done(water evaporates) cover and simmer on low heat for about 20 mins.
for the sauce.
take two tomatoes whole make fourcuts on top add these in water about 3-4 glasses
8-9 garlic cloves
boil it add 1 pack of tomato paste
salt according to taste and 3/4 teaspoon red chilli powser
bring to boil
make a puree out of it in a blender and boil again until thick
u can add potatoes if u want to at this stage
and u r done
for the salad -- cut 2 cucumbers 1 medium side tomato quarter bunch parsley
fry kubus(cut in squares) in lill bit of oil ( for added taste u can fry them in the oil u fried chicken) remove until brown and crispy
toss in cucumber, tomato parsley in a bowl add in 2 table spoon olive oil abt a quarter teaspoon salt and quarter teaspon white pepper powder or u can use black pepper poeder too add 1 teaspoon of lemon juice and add the kubus crunch .. u can add sumac too
Lastly, take half an onion and some raisins. fry the sliced onion till golden brown and add raisins in the end, once raisins flutter..quickly remove add on rice bed topped up with chicken. voila :)

ur welcome muslimah118 - it is a dried herb slightly longer than clove, has a stronger taste than clove. U can use clove instead :)

Thanks Shazzyuk, I make it in many ways…using shan masala’s and my own too.

for this one recipe as follows..

1 kg of lamb chops & boneless lamb mixed
rice 3 glasses
slice 5 medium size onions & fry them with 1 cinnamon stick, 2-3 black cardamoms 7-8 pieces of whole black pepper 5-6 pieces clove. Simultaneously, add 1 tablespoon ginger paste & 1 tablespoon garlic paste each. fry until golden brown. Meanwhile, seperately bhunofy 1 tablespoon dry coriander & 1 tablespoon cumin seeds (in a non-stick pan without any oil) take it off the flame and grind it..i usually do it with mortar & pestle (dori danda).
add little bit of water, salt according to taste, 3/4 teaspoon turmeric powder & about 1 teaspoon of red chilli powder. add about half packet of shan memoni briyani masala. now add the lamb. pressure cook for about 15-20 mins. bhunofy, once water evaporates and the lamb in tender add tomatoes. bhunofy more. once oil seperates, add about 1 cup of yoghurt and cook until you get the desired consistency. it shouldnt be too watery. your masala is ready.

oh and soak the rice in advance. Boil the rice, add around 2 heaped teaspoons of salt 2-3 tablespoon of oil & 2 dried bay leaves. keep checking the rice, Once rice are almost cooked (make sure they are not fully cooked that is over cooked for briyani) drain the water. keep aside.

Now the layering, slice one lemon ( around 8-9 slices)
for the color, you can take the oil from the lamb curry and add the yellow food color powder used for briyani
spread rice in a non stick pot. place 2-3 lemon slices and few fresh mint leaves. second layer of the lamb curry..third the rice again. repeat the lemon slices & mint leaves add few drops here and there of the food color made. The last layer will be of rice. add few saffron strands on the top layer. and few drops of color.
put on dam for 20-25 mins by keeping a kitchen towel or a cotton cloth between the lid and the pot.

serve with raita …if you try, let me know how it turns out :slight_smile:

^ oh & i forgot while adding the tomatoes in the gravy i add around 5-6 indian green chillies as well.
