from the past few weeks:
salmon. wild rice with bell pepper, blueberries, almonds, celery, spinach. and raspberries and avocado on the side.

Ramen noodle soup with spicy chicken, cabbage, and spinach and mushrooms and a boiled egg

Noodles on one side, salad on teh other with an avocado and grapefruit on the side. ![]()

Just…random stuff I threw together. brown rice, mushrooms, boiled chicken, almonds, asparagus, spring onions and cabbage.

Tuna pasta bake
Ingredients
• 500g/1lb 5oz pasta shapes such as fusilli, penne or farfalle
• 50g/2oz butter
• 50g/2oz plain flour
• 600ml/20fl oz milk
• 200g/7oz extra-mature cheddar, grated
• 100g/3½oz can sweetcorn, drained
• 100g/3½oz peas
• 3 spring onions, chopped
• 2 x 185g/6½oz cans tuna in spring water, drained
Preparation method
1. Preheat the oven to 180C/350F/Gas 4.
2. Cook the pasta in a saucepan of plenty of boiling water according to packet instructions. Drain.
3. Meanwhile, for the sauce, melt the butter in a saucepan over a low heat and stir in the flour with a wooden spoon. Cook for one minute, or until the mixture darkens slightly.
4. Slowly stir in the milk, stirring until smooth after each addition of milk. Stir in the mustard powder and continue to cook until the mixture thickens enough to coat the back of the spoon.
5. Remove the pan from the heat and stir in most of the cheese, and all the sweetcorn, peas and spring onion. Season, to taste, with salt and freshly ground black pepper. Stir the cooked pasta into the sauce.
6. Spoon the tuna into the bottom of an ovenproof dish. Pour over the pasta and sauce. Tap the dish gently so the sauce pours into every nook and cranny. Sprinkle over the remaining grated cheese.
7. Bake for 15-20 minutes, or until the sauce is bubbling and the top is a golden-brown.
This is the recipe I use but I added a red chilli and some Italian herbs in the sauce before mixing the pasta.

marinated the salmon in a lil bit of lemon juice and mustard. Covered with panko bread crumbs and cooked it on the stove. (very little oil)
the other stuff…was stuff I had around. Wild rice was ready made, I didn’t like it too much
so I mixed in everything else. (bell pepper, almonds, celery, spinach and bleuberries)

I had made chicken noodles the night before. ummm boiled noodles, bhooned boneless chicken breast and bell peppers and mushrooms and celery, mixed it all together…hot sauce and dhania/scallions on top.
Salad is just baby spinach, mixed greens, red onion, celery, pre-shredded carrots, and as you can see..avocado and grapefruit on the side.

I was trying to make a soup, and for the leftovers, I took out the rice (brown rice..make according to package directions), left a lil bit of broth. I had some boiled shredded chicken, bhooned garlic and the chicken and cabbage and mushrooms, added a few almonds in the end, and then poured it on top of the rice/soup.
