cut a small pumpkin into 4 quaters, removethe seeds and the hairy stuff with a spoon or knife. Drizzle olive oil, sprinkle dried basil, oregano, thyme, salt, blk pepper, cinnamon, and cumin powder. Cut an onion into 4 quaters. Place pumkin andonions in a baking pan. Bake for a good hour and half at 400F. Take it out of the owen, peel the skin, it will come off pretty easily. Put the pumpkin and onions in the blender. I did not have any stock on hand, so i just used milk to thin it down. If you have stock, you can use equal amounts of stock and milk or come up with your own ratio. Pour the blended mixture in a pot. Simmer the soup for few mins, check seasoning, add a little butter if you'd like. OPTIONAL. In a frying pan sautee some corn and shrimps and corn. Spoon some corn and shrimps in a bowl, pour the soup over it and enjoy. =)
If possible can you share your recipe of tomato basil soup
Raania, the tomato basil soup was totally made up. I don't even know if I made it right. I just used what I had at home. Here goes:
I took some tomato sauce and diced up some fresh tomatoes, put them in a saucepan and cooked them until they formed a sauce. I adjusted the consistency with water. I added minced garlic, salt, black pepper, and some minced basil leaves. Add some olive oil. Taste for seasoning and adjust. Then at the end, turn off the stove and add some cream. Once I was happy w/it I poured the whole thing through a channi to get a smooth soup.
I just added shaan chicken makhni masala+1 tbsp tomato paste into soaked yellow and red lentils in the pot and put it off on low heat. pata nai kya banay ga I think I will add some whipped cream and fresh dhania in the end to see if it tastes like daal makhni.
