Re: Aaj kya pakaaya/khaaya

Looks refreshing :k:

I think we desi should convert now. Making steamed food is not that difficult but you need equipment. Can you share pics of your tools and way of using them for steaming food ? thanks

Re: Aaj kya pakaaya/khaaya

I started using those steam microwave bags !! Super easy and super fast.

Another way is to really wet a cloth and warp it over the veggies and put in in the microwave for 5-10 mins !! The cloth needs to reallllly wet !! I use to steam potatoes when pressed for time. Also no need to wash the cooker afterwards.

Re: Aaj kya pakaaya/khaaya

what is the wok that you use.

We use Analon at home !!! It’s simply amazing.

Could you post the chicken tandoori masala recipe !! I wanna try and cook chkn for the first time. This seems like a good recipe.

Plus how do u get the oil to float on top ??

Re: Aaj kya pakaaya/khaaya

Lolz My huby also demand the same :cb:

Re: Aaj kya pakaaya/khaaya

so how do you make proper qorma?

Re: Aaj kya pakaaya/khaaya

this is how i make :

wash handful of each dal – masoor, mash, toor, chana and moong. In a wok, add the dals, chopped tomatoes, water, red chilli powder, ginger garlic paste and turmeric powder. Let it cook on medium-high flametill daals are done (the dals should be soft – but not too mushy).
then add salt, juice of 1 big lemon and some water if its too dry. Simmer for 7-10mins. (the raw taste of lemon juice should go).For the tadka: heat few tablespoons of oil , add mustard n cumin seeds, dried red chillies, few cloves of garlic and curry leaves. Let it splutter for a minute and add this to the dal

Re: Aaj kya pakaaya/khaaya

i m using prestige, its great ;k:

chicken tandori is very simple n tasty , this is how i make :
fry onions in lil oil, add ginger garlic paste, add chicken fry it wth chicken, add tomatoes, lil yougart n shan tandoori masala, mix it well cover it n cook on low it, till chicken is done, remove lid n let it simmer on medium flame till all water evaporates add green chillies n coriander, mix it n remove it from stove.

and for qorma: i just use wide wok n excess oil n cook on low flame, till oil comes at top :)

Re: Aaj kya pakaaya/khaaya

Simply AWESOME.

Re: Aaj kya pakaaya/khaaya

this is how i make :

add oil in a pan and add your finely sliced onion and let it turn golden brown

once browned take them out and make a fine creamy paste by adding yogurt in a blender, once the paste is ready keep aside. Please make sure that the paste is very smooth and creamy

in the same oil saute chicken till it changes color and then take out and keep aside,

then make a fine creamy paste of almonds (skin peeled) or if your using cashew nuts then paste of cashew nuts , please make sure that the paste is very smooth and creamy.

then add you spices ( make a powder out of the following spices after dry roasting them :cloves black pepper corns, nutmeg, mace, green cardamom ,black cardamom, bay leave, cumin seeds---dry roast them n thn grind them) then add salt,
red chili powder, turmeric powder, coriander powder ,garam masla powder and add water and make a paste and keep aside

now in the oil add bay leave and black cardamom then add then spice paste and saute till u see oil afloat

then add your onion and yogurt mixture and a little water and saute well

then add the almond or cashew nuts paste and add a little water and saute well

once your rich gravy is ready , add your chicken and let is cook on low heat, first in its own water

then add 2 cups of water and let it cook fully. finally add rose water and close the lid.
