Ingredients
1 package of wonton wrappers (available at Chinese stores) or make fresh dough first by kneading plain flour, a pinch of salt and as much cold water as required into a stiff dough. Knead the dough until its soft and elasticy, cover with a damp cloth and set aside for an hour. Roll out the dough on a lightly floured surface and cut into squares of approx 4 inches. In the centre if each square place a teaspoon of the meat filling mixture. Draw up opposite corners of the dough and pinch together so you have a little parcel type shape. It shouldn’t be airtight though, otherwise it’ll explode when the steam builds up inside it during cooking.
Heat oil in a fry pan and add 1/2 kg of mince beef or lamb and stir until the meat is golden brown. Add 1 kg of chopped onions (this mixture should have more onion than meat)and cook until transparent then add 1 ½ tbsp of ground coriander and 1 tbsp pepper (as needed) ¼ tbsp cumin ground, red chilli powder, salt per taste(optional) and mix through. Take pan off the heat and place in dish to cool.
**Topping **For the Sauce:
garlic cloves3 tomatoes diced
1 tbsp tomato paste
¾ cup water
1 tsp salt
3 tbsp oil
Soak split peas 2-3 hours or over night
Heat oil in fry pan and cook onions and garlic until lightly browned
Add tomato paste and diced tomato
Add split peas and ¾ cup water and cook for 30-45 mins until soft
Season with salt and pepper and set aside.
Place the mantus on a steamer making sure there is ample space around each mantu. Steam for around half an hour or more on a medium heat.
Yogurt sauce: Add 1 garlic, 2 teaspoon water and mint to the yogurt mix.
To serve, put a layer of the yogurt on a flat serving plate ghori; then place the mantu on top of the yogurt plate. Afterward put another layer of yogurt on top of the manto and add a layer of the lentil sauce. Then sprinkle some fresh or dry mint on top of the plate. Some people also sprinkle some red chilli powder (optional)
Note: there are different variations of sauces for the mantu, e.g. mixing yellow split dal with keema, garbanzo beans with kidney beans or some people prepare vegetable topping. Personally i prepare keema and daal topping or just dal.
In Afghanistan, sometimes instead of yogurt, we use chaka or hanged curd, sometimes from this hanged yogurt small round balls (quroot) are made and then dried in the sun. These balls are then smashed and soaked in hot water and mashed in blender when it is needed.
As preparing mantu is requires great effort, many people prepare the dumplings in advance and store them in freezer.

Recipe for Philly steak sub
Ingredients
1lb top sirloin... very thinly sliced
4/5 cloves of garlic mashed
1large Onion
salt n pepper to taste
pepper jack cheese and cheddar cheese
4 subs
1tbspoon of yogurt..hehe yes yes i gave it little desi touch
marination
in bowl add sirloin salt,black pepper, garlic and yogurt. keep in fridge for 2/3 hrs
grill the steak for 10min 5 min on each side.after the meat is cooked cut it into little chunks
Heat 3 tablespoons oil in a nonstick skillet over high heat. Saute the onion slices until wilted and just starting to take on some color, Sprinkle onions with salt while cooking.at this point add sirloin chunks.
toast subs on tawa and fill the subs with onion and steak .. put cheese on the top.and enjoy..
