Re: Aaj kya pakaaya/khaaya
Chicken Tikka Masala
Here’s how I did it. I tried looking up recipes, but I didn’t have a lot of ingredients, so I did it my way.
3 tbsp Shaan Tikka Masala
Heavy Cream - pint
2 tbsp Smart Balance butter
1 lb of boneless chicken
2 tbsp curry powder
2 tbsp garlic powder
1 onion
1 plum tomato
2 tbsp honey
salt
laung (cloves)
I marinated the chicken for 1 hour in 1 tbsp of shaan masala, some salt, 1 tbsp curry powder and 1 tbsp of garlic powder (you might need to adjust these ratios based on your spice preference. I guess use less curry powder if you don’t want it so spicy).
I made the sauce : heavy cream + 2 tbsp shaan masala, 1 tbsp curry powder, 1 tbsp garlic powder + 2 tbsp butter
Onion and tomato → in hot oil
Let them sizzle, but don’t cook fully
add in the chicken and toss it around for 10 seconds.
Add in the marinade immediately after and let it cook in that marinade. I found it makes the chicken cook slowly and so its tender and not overcooked at the end.
Sprinkle salt lightly into the mix. Add the honey. And add the laung.
2 tbsp of Greek yogurt, butter, and mayonnaise each
1/2 tbsp terragon
1/2 tbsp basil
1/8 tbsp onion powder
Lime Juice (works way better than lemon juice, which is what the orig recipe calls for)
1/4 cup parmesan cheese
Mix it all up. Marinate your tilapia fish with it for 20 min. Bake for 20-30 min on 300. Then Broil it for like 2 min. You have to keep flipping the fish though throughout this time. It cooks very slowly.
That’s for the Parmesan Fish
