basically you follow the same recipe
Kabuli Palau
Ingredients:
4-5 cups of long grain rice / basmati rice (preferably afghani and needs to be soaked in water for at least 4-6 hours
chicken- half kg (or preferred amount-apply saffron/turmeric to chicken-optional)
5-6 large carrots
2 spoons of sugar
Oil
Salt
Garam masla
Preparationn:
Peel and slice large carrots and cut the carrots into matchstick size pieces (khilal). Wash the seedless raisins. Fry the carrots in a pan with half cup of oil and 2-3 spoons of sugar. Cover the lid for 3-4 minutes, now remove the lid and let it cook for a few minutes. When the carrot is tender, add the raisins and let it cook again until the raisins swell up. Make sure you do not break the matchstick sized carrot pieces when you are stirring, so stir gently. And don’t fry it too long, you do not want burned carrots. Remove the raisins and carrots from the oil. And fry 2 spoon sugar in remaining oil over a medium heat until it melt, and turns a dark golden brown. Remove the pan from the heat and carefully add water (1 cup or half cup) and then bring the water back to boil.
Brown 1-2 medium diced onion in oil. Fry until brown, add chicken and cook iut over medium-high or high heat for 6 minutes, turnign from time to time so all sides turn golden brown. The onions will start to carmalise and turn into a thick sauce. Add 2-3 cups of water, salt and garam masala (cumin, black pepper, black cardamom, cloves, and sometimes green cardamom- grind these)Cover and simmer until it is done.
Remove chicken pieces from the juice and set juice aside.
6 hours later, bring enough water to a boil in a big pot, add rice and salt. The water should come about 4 inches above the rice. Now add 2 cardamoms, this is to give the rice a nice smell. Do not let the rice boil too long, it should be tender but not mushy. As soon as it is tender, drain the rice in a large sieve
Return the rice back to the pot, add sugar syrup made earlier and mix gently. Also add the meat juice and mix gently. Bury the meat in rice or put it to one side, also put the carrots to one side. Foil the pot, and put the lid on or you could use one of those lid "covers" (i guess you can them back home from Pakistan, or Afghanistan) or use towel, and wrap around the put and then put the lid. Finally, place the pot either in oven or over a low heat for 30 - 40 minutes.
When serving, put rice in a large platter , aaarange the chicken pieces on the top and sprinkle carrots over the top.
Note: some people use 2 tsp. browning sauce such at Kitchen Bouquet (optional)* I haven't used it myself and don't know how it would taste.

For meatballs:
*
Minced lamb:500gm
Ginger powder: 1/2 teaspoon* *
Red chili: 1 teaspoon* *
Salt: to taste* *
Aniseed(saunf):1 teaspoon* *
Garam mamsala:1 1/2 teaspoon* *
egg:1* *
Breadcrumbs:1/2 cup* *
onions medium size: 4* *
gram flour (besan): 3 tablespoon* *
capsicum:1* *
Coriander: a handful*
Mix the above ingredients and process in a processor untill mince and onions are homogeneous. Check the moisture, you may need to put in some more crumbs. Make balls out of it.
Smoke the balls using coal piece and then cook uncovered in the oven for 20 minutes.
Forsmoked meatballs:
*Potatoes:2(make french fries)
onions:2 (medium size)* *
Fenugreek seeds(methi dana): 1/2 teaspoon* *
Oil: as required* *
Salt: to taste* *
Red chili flakes:half teaspoon* *
Green Chili:For garnish* *
Ginger (julienne cut): for garnish* *
Cilantro/coriander: for garnish*
Saute onions in the oil until soft. Roast fenugreek seeds and grind. Put them to onions. Also put in red chili and salt. Add a few drops of water, cover, lower heat and let cook for 2-3 minutes. Mix meatballs with this masala. Spread fries in a dish. Put meatballs on top and serve. Garnish using coriander and ginger.
PS:This is the original version. The pic i posted was messed up by our cook. He used tomatoes in the masala and also cooked fries along with masala. That will ruin the appearance.

here are the recipes:
LASSANIA:
boil lassania sheets in water with lil oil n salt
fry ginger garlic paste in oil add bonelesss chicken in it n fry tilll chicken becomes tender then add onions,carrots,green bell pepper.....fry them for a while then add cabbage,peas and corn in it.........add salt,red chili powder n black pepper mix it well n cover it for a while then remove from stove
(WHITE SAUCE) take lil plain flour in pan when it start changing its colour n giving smell add milk in it stir it well add cheeze slice in it n mix it well add lil salt n black pepper remove from stove when required consistency is achieved.
greese the baking dish wth oil or butter give layer of lassania sheets then layer of chicken mixture then add lil whit sauce all over it n thn tomato ketchupmake these layers again add chredded cheeze all over it then grill it in the oven till all cheeze spreads evenly
SALAD:
boil macronis in water with lil oil n salt in it......... boil boneless chicken separately wth salt n black pepper..........take a bowl add these macronis n chicken add boiled red kidney beans,green peper bell,carrots,corn and baby corn,add lil garlic powder n lemon juice in it mix it well.....(you can mix any salad dressing in it which you like but i make my own) in a bowl take tomato ketchup add mayonise in it , lil vinegar, salt n black pepper mix it well n then add in the salad n mix it well...............
