It was my first time making them, but they are easily adaptable.
If you’re using fresh tuna, I would just bake it until it’s barely done and then cool so that you can break it up. If you’re using canned, make sure it’s the high quality albacore kind and thoroughly drain the water from the can.
Bake the potato(es). I used 1 russet potato for 2 cans of tuna, but you can adjust the ratio to get more potato if you want. I just poked holes all over and microwaved the potato until tender, but you can also bake it in the oven or boil it. If you boil it, drain and dry out in a hot pan.
Once the fish & potato are cool, throw them in a bowl with finely minced green chilis, cilantro (the stems work well here), scallions, salt, red chili, & black pepper. Taste at this point to adjust for seasoning. For my 2 cans tuna + 1 potato, I only needed 1 egg to bind the mixture and 1 egg for dipping. To fry, dip in egg, then coated w/breadcrumbs and fried on medium heat 3-4 mins per side.
