Re: Aaj kya pakaaya/khaaya
I made it with 2 big piece.
Give some cut on both side of the chicken (I usually make with hole leg piece).
In a bowl add 3 tablespoon yogurt, 1 tablespoon roast spices, salt to taste, 1 teaspoon lemon juice and 3 - 4 pieces crushed garlic. If you want it extra spicy u can add chillies powder.
Mix together and marinate the chicken in the yogurt mixture. Let it rest for few hours in the fridge.
Preheat oven at 200 degree C, and transfer the chicken to a baking pan/sheet (I have a heavy bottom baking dish), cover with foil and put it in oven for 30 mins. After 30 mins change sides and cover again for 30 mins.
After that remove the foil (If u want u can sprinkle more roast spice on the top) and cook for 5-10 mins both sides on high heat until brown (mine is 270 degree C).
For the gravy, I take the juices/masala left on bottom of the dish, put in a saucepan on stove add corn starch, chicken stock/broth or even water and mix together. Increase heat to medium and let it boil two tree times, the gravy will become thick (add more corn starch if u want thicker). U can add salt or pepper if needed.
If u feel there are lumps in it, just strain gravy through a fine sieve. And boil again.
