sarah, here you go! the original recipe was on a blog somewhere; i’ll cite it as soon as i manage to locate it. my slightly edited-to-preference version is below.

CHICKEN CHOWMEIN

You will need
Chicken and Veg:

300 gm chicken breast, sliced very thinly
1 cup julienne of carrot
1 cup julienne of cabbage
1 cup bell pepper, sliced thinly lengthwise
1 cup spring onion greens, chopped roughly
1 onion, sliced finely
1 heaped tbsp garlic paste
1 tsp ginger paste

For the sauce:
1 tsp red chili flakes
1 tsp salt
1 tsp Chinese salt
3 tsp black pepper
3 tbsp ketchup
3 tbsp soy sauce
1 green chili, very finely chopped (de-seeded if you prefer)
juice of 1 lemon

Method:
In a wok, heat 3 tbsp vegetable oil to medium. Add the sliced chicken and stir-fry for 5 minutes or until it changes colour.

Add the onions, and the garlic and ginger pastes. Stir-fry for 5 more minutes until fragrant and then cook, covered, for about 5 more minutes to make sure the chicken is done and the onions are soft and translucent.

Add in the chili flakes and stir through.

Add the carrots and cabbage, stir-fry on medium until slightly soft. Don’t overdo it, they taste fresher when they’re still a bit crisp.

Add the sauce ingredients toss with the chicken and veg to combine.

Lastly, add the capsicum and spring onions and fry for 2-3 minutes.

Add boiled noodles, toss through, and remove from heat.

Done!
