Ingredients are not the problem, it is the ratio and the frying process for me. I’ve thrown out many pakora mixtures over the years as I can’t get the pakoras right. Either hard as rock, or uncooked inside, or they disintegrate as soon as a spoonful hits the oil. I’ve had my family and friends stand with me while trying to make pakoras, and we’ve come to the conclusion that I fail in the pakora dept.
