Re: Aaj kya pakaaya/khaaya
The maash ki daal:
1 cup daal, washed and soaked for an hour with just enough water to cover
2" piece of ginger, 3 green chillies ground together
salt, red chilli powder
1 medium onion
2 cloves of garlic thinly sliced
cilantro
Boil soaked daal with the ground ginger, green chillies ground and salt and red chilli powder with just enough water. As it comes to a boil, you’ll see froth on the top. Remove it. Stir well and lower the heat to med-low. Cook covered. Make sure the daal isn’t sticking to the bottom. I usually just run my wooden spoon at the bottom of the pan or shake the pan. WHen cooked, grains should be separate and tender. Make tarka of onions and garlic…a little darker brown. Pour over daal. Add cilantro.
For the chicken salan:
This was a quick one. I ground one onion, 4-5 cloves of garlic, a piece of ginger, 2 tomatoes, salt, haldi, dhaniya, mirch, some water, all together. Pour into oil, add chicken, mix and cook on medium. WHen cooked, lower the flame to low-med, cook covered until oil separates. Done!
