I use my crockpot mostly during the colder months, like for making chili, stews, or baked potato soup.
The past 2 years I’ve made mashed potatoes for our family thanksgiving get together in a crockpot
I’ve made haleem in it before and recently I did Moroccan spiced boneless chicken thighs in my crockpot and served it with fruity couscous.
Slowcookers/Crock Pots theoretically use less oil, because it’s a braised/slow
cook method. You just have to make sure you don’t compensate the lack of oil with high cal creams/milk/butter or other fattening liquids. M
staples at my place from last and current winter are lamb shanks, short ribs, oxtail stew, 90% of rendang - pretty much any braise. even better if you can leave it to cool and pluck off the fat that floats to the top and congeals.
Daals such as Channa cook really well in the Slow Cooker. Can someone tell me what I should ask the butcher for if I want shanks? I’m struggling to find a desi butcher who knows what I’m looking for!
Shank refers to the leg bone of the animal, beneath the knee. Can also be called the shin. You can try telling the butcher you want something similiar to nihari meat, which is typically made with the shank, but to leave the whole bone attached so that it resembles this:
I have been meaning to buy one for years, but haven’t come around to it!! The one I like at williams sanoma with the ceramic pot costs $300. argh
I might just have to settle on something soon because my friend recently gave me a raisin bread pudding recipe (my favourite) to make it in the crock pot
How do u guys bhoon and fry?!? I know there are some which can be put on the stove but I have the basic one and for soups or just sautéing my meat a little I end up using a different pan/pot and then cooking it in the crockpot.
Thank you Khatti. I’m going to show the Butcher the image as last time I asked for Nihari meat he gave me back chops! I mean some on; get with it Butchers!!
Do you mean for recipes like Keema? I have a 2 in 1 slow cooker so bhoon in the pan and then place it in the cooker. However if you really wish to bhoon for the slow cooker you could bhoon on the stove and put it in the cooker?
When I buy fresh meat, I actually make crockpot packs, containing the meat, spices and veg - ready to go into the crockpot. I freeze them, and then take out the night before to thaw, add whatever liquid is needed and leave to cook.
My standard recipes are:
Beef stew
Beef stew with a tomato base
Bolognaise (I start the cooking on a cooker first)
Chicken Enchiladas (cook the chicken, roll in tortillas and put under grill)
Chicken Enchilada soup
Haleem (I start the cooking on a cooker first)
Nihari (I brow the meat first)
Lamb pot roast
It really saves a lot of time when I come in from work.
