Diva its veryyyy late here ....n I'm quite sleepy.....I'll describe in detail later if you need....for now:
boil water with zarda colour...add rice drain water once the rice is almost done....mean not fully boiled...now heat ghee in a pan throw in some cardamom blanched almonds, diced coconut raisins etc. (watever u like) add rice n then some sugar then again rice ....pour some milk over it n keep on slow heat (ltightly closed) for 10 minutes or so
for 1 cup rice take 4 cups water to boil....n sugar is equal amount ....1cup rice n 1 cup sugar......some ppl prepare sugar syrup for zarda but i prefer it this way ...n adding milk makes rice nicely tender/done....without breaking the grain

I make mine the same way as Afia baji. ITs supposed to be equal amounts of rice and sugar but that produces a too sweet zarda for my taste so i just use a 1:3/4 ratio.

I made it 3 times yesterday with the sugar syrup way and it was a complete disaster. I will have to try Afia's way today.

for 1 cup rice take 4 cups water to boil....n sugar is equal amount ....1cup rice n 1 cup sugar......some ppl prepare sugar syrup for zarda but i prefer it this way ...n adding milk makes rice nicely tender/done....without breaking the grain

lol…Ira I used to cook with 1:3/4 ratio but lately I don’t feel it right its a bit pheeka for me (blame my low sugar level for that)…khair before increasing sugar i just mentioned it to ammi n she said I’ve already increased it as she too thought it was not as sweet as she likes…so now we both cook it with equal ratio ![]()

Ahmadjee...I just pour some like sprinkling on the surface (top layer) ....can't say exactly but I think 1/4 cup should suffice or may be a lil more. I'll note it down next time I cook !
basically sugar tends to stiffen up the rice a bit ...n without any water/milk it'll surely do that. Adding milk instead of water is better as milk doesn't give it the overdone look ....rice grains stay in shape n like 'nikhray huay' :)

Yaar, with one cup rice, can you do that ? I don't think its enough rice to make layers. Or do you use a smaller pot ?

Thanks Affia, I tried it tonight and it turned out really good.
This is what I did;
Soaked 1 cup of basmati rice for 30 min
Boiled 4 cups of water with a half tsp of yellow coloring
Added soaked rice and boiled open on high
As soon as all water evaporated; drained rice into a colander
In the same empty pot, heated half a stick of margarine and 6 crushed ilaichi without the chilka.
Added 1/3 of the drained rice and layered it on top with 1/3 of sugar; repeat three times
Sprinkled 1/4 cup of milk and dum for 10 min on very low heat

The dum didn't work out well so rice are all mushed up. Otherwise, they came out fine.

Zarda rang ki jagah zafraan use karo. Zarda with zafraan is best!
