Yummicilious Chicken Karahi - Recipe needed!!

I need recipe of a super yummy chicken karahi but please be exact in terms of quantity.

I have to make it for only 2 of us. I haven’t been able to fix my masala contents and have ended up with more salt, less salt, more masala, too much masala, pheeka Salan everything! So please be exact in measurements. :slight_smile:

Here is my recipe

Chicken: 10 to 12 pieces
Tomatoes: 2 large size
Ginger Garlic Paste: 1tbsp
Coriander Powder: 3tsp
Yogurt: 2tbsp
Onion (if you want gravy i dont usually add): 1 medium small size (grinded better)
Whole Red Chillies ( i dont put powder): 4 to 5 (if u like spicy add more)
Green chillies sliced: 1 to 2
Zeera whole: 1/2 tsp
whole cloves: 3 to 4
Black peppercorn: 6 to 8
cinnamon stick: 1
black cardamon: 1
Garam Masala Powder: 1/2 tsp

Method

In a pan add chicken, ginger Garlic paste and Corainder Powder and add 1 1/2 cup water and leave it for 5 mins or until chicken is 75% done. Then add tomatoes, onion (if you want) and Yogurt and leave for 2 mins. Fry this mixture by putting oil now (oil not to be put before) until smell of chicken is gone. Meanwhile add yogurt and all garam masala. Also add red chilies and green chilies. Leave it on dum by putting water (as much gravy you want, it would not be like shorba just a bit dry gravy) and put coriander leaves fresh over it. If you like ginger you can also add that in sliced form.

oh sorry Salt to taste, i usually put 1.25 tsp

Daffy if you wanna gain control on the masala's .. here's an easy trick:

use only one tsp salt, one tsp red chilli powder and quarter tsp haldi ( the basic masala's )
Then see how you like the taste of the food .. and decide if you need to increase or lower the quantity .. slowly you will know exactly how much you need to use each spice ..

I once asked a very experienced lady how to get perfection with "andazay sai spice dalna" and she said first step is to benchmark and then increase or decrease and thats how you will become perfect at it ..

Yup you're right. I have different measurement spoons in each jar .. 1 tsp one in salt, 1/4 tsp in haldi, 3/4 in garam masala, 1tbsp in sookha dhaniya etc. this is probably why I don't have a benchmark and keep messing with the masalas.

I mean the onions & tomatoes remained a bit in their original shape, not really liquidified into masala form

You have to use grinded onion but tomatoes do get into masala form easily as It never happened to me. Onions if not grinded do create problem but tomatoes never. May be something went wrong

I might be a little late but here's my chicken karahi recipe which is very easy and always a hit.

Chicken 1 kg
Tomatoes 750 gm
1 tbsp red chilli powder
a little less than 1tbsp salt
Ginger garlic paste 2tbsp
Garam masala powder 1tsp
Dried methi 2tbsp
Green chillies, ginger julien cut and corriander for garnishing.

Warm up the oil, add the chicken and fry on a moderate heat so the chicken doesn't loses its juices. 5 mins later add the ginger garlic paste and fry for a while then add salt and red chilli powder, fry a little and add finely chopped tomatoes, if you feel your tomatoes remain hard,(which can also happen when we cook less amounts, happened a lot with me when I'd just cook for two people) lower the heat, cover the lid at this point and let them get soft, for like 10mins or until you see that chicken is fully tender. Take out the lid and bhoonify at high heat add dried methi. Sprinkle the garam masala, fresh corriander, ginger and green chillies. Put on dum for 5 mins and its ready!

Same like me almost, but I do add a small grinded onion very small though it gives a good taste but i dont put methi, if i put methi i call it methi chicken and not karahi :D.
