For me it has to be Cajun Spice Mix (In a bottle) with most non-desi stuff. I add a little when cooking chicken/fish/shrimp/pasta...etc. For Desi definitely Shan...any random box I get my hand on.
I am obsessive with Cajun spice!!!!
My brother does that..He loves cajun spice too..I feel like trying it now.

If you want to make your own, here's a recipe:
Prep Time: 10 minutes
Ingredients:
Preparation:
Combine salt, chilli powder, paprika, onion powder, black pepper, basil, oregano, coriander, cayenne pepper, thyme, cumin, and white pepper until well-mixed.
Place the spice mix in a glass jar and seal tightly. Store in a cool, dark place up to 3 months.
Or just buy it from Waitrose, Sainsburys or Tescos!
Ooh I forgot to mention lemon…some cajun spice mixes even have lemon peel. Cajun mix typically has garlic powder/onion powder, LOTS of paprika…salt…some herb etc…really good. I usually marinate meat with lemon juice & Cajun seasoning…you can NOT go wrong.

I use lemons and lime, lemon juice, lemon/orange peel in baking.
just throw a lemon in your biryani and see how light it gets.
i dont use it quite often but roasted cumin, black pepper, coriander and cloves definitely makes a big difference

if you have time make it, otherwise most grocery stores carry a pre-blended bottle, but you have to find the right one. I tried several brands until I got this one at Pathmark that gives the right amount of spice & zest. I dunno if you ever had blackened anything in a restaurant like blackened Salmon.....basically they rub cajun seasoning on it & cook in a cast iron skillet...it is yummalicious :)

.. I love tonns of black pepper on salans right before eating … and half fried egg with super tonns of black pepper , like i can hardly see the white egg , its all black coz i sprinkle sorry throw so much pepper on it ![]()

LovelyChica, do you just mix it all up or blend it in a blender.. I mean should it all be in a powdery form or the individual maslas retain their shape..

I love multiple spices:
Dhania seeds...in kababs I put lots of them...for some reason I love the way they do "kut-kut" in your mouth. Yummm.
I love laal mirch in almost everything.
Zeera powder is a must have in all of my dishes.
Mint...dried.
