That is obviously a more legal, ethical way of interrogation but if you don’t have any evidence against the suspect, you’ll have to let him go because he isn’t going to confess.

Yes, what sort of justice system lets people go due to lack of evidence. Screw due process, water-board the bastid and watch him confess.
