Worlds Best Nihari as I cook it..............

I know many people are passionate about Nihari and I see some really bad stuff out there so today i will walk you thru as I am cooking it. Got Shank meat from Ali with bones, I like fairly large pieces as it can cook for long periods and release collagen. Asked him to throw in the ankle soup bones in. The tendons will lquify and make the gravy divine. Made my own masala, please no haldi, jeera, dhania or garlic. Saute meat with loads of ginger. @akaprincess baita never boil nihari meat, you brown and simmer, boiling toughens meat,

I browned meat at high in batches, dont put too much meat at the same time just single layers, also brown the bones and tendons. add water and heat add half the masala. Seal the pot real good and put in the oven at 350. After 3 hrs I will put atta and rest of spices. Now I go for 2 hr walk

Never zeera prince, even shaan masala ingredient list does not have zeera. Loads of adrak. The technique is to have the fragrant aroma of saunf, laung, dajarin to be enhanced. garlic will mask the fragrance. haldi neutralizes aromas also.

here is what it looks like before going in the oven. The whole house is now filled with aroma. Adding atta you have to do in batches as if it is too thick it will ruin everything.

I have close to 6kg meat cooking in here. We will definitely eat for 3 days. Why don’t you like adrak as garnish? ginger is so good for you. saunf is very digestive also.

3hrs in the oven at 350, added flour. tasted it and it was unbelievable. Ali sells younger cows meat and it just melts in the mouth

Lately, most of my dear customers are gujratis, South Indians, and Pakistanis so my terminologies have been influenced. I forgot Bengalis and Nepalese.

^His post was more about the trip and not so much about his wife. Here..allow me to fill in the gaps.

Wife is a kashmiran. Bobby was in love with someone else when he married Bobette. Bobina challenged him that she would win him over…and win him over she did. Bobby is more sughar in the kitchen than Bobelle. Bobanna seems to have a passion for shoes..Pumas and other brands. Bobra still holds on to some traditional practices (dua, etc etc) whereas Bob is a pakka gora inside. Bobetty had a troubled family life that has made a deep impact on Bob. Bob can’t stand some of Bobwati’s family members because they take advantage of his niceness. But he finds solace in checking out the other deviyan at the gym. Because ghar ki murghi…I mean nihaari and daal barabar. :frowning:

I think I got the gist of the Bobashian family. :hmmm:

Anyhow, the details and the names were the same in posts under other..erm..titles. So, I don’t doubt the veracity of Bobby1’s family life so much. HOWEVER…my issue is with the bragging and the demeaning others.

But meh…I am not nice to Bobby Pai either. More fun that way. :chai:

at this point i am starting to think bob and his cousin wife julfikar are both from bihari or UP. almost all the pieces fit.

The reason the recipe i posted called for boiling, was to cook it, as gosht takes time too galana

Paa ji. You can get the pics from the same source as he would. Just make sure you rename so it doesnt appear in google search. See consider the style of writing mentioning the character names etc. Now its very easy for anyone to start believing on it because otherwise you could have said, meh ye to phenk raha hai. Booby ko halka na lo, na hi inki nikhari ko. Its really world-phamos. From Dur Darshan to Russian television to BBC. They give a breaking news when booby starts writing about it
