So…I thought I’d open the hundredth work lunch thread in HACC
Here’s the thing…I don’t like eating bread during lunch so options become limited. Its not that I don’t like bread…I feel its too heavy and I get sleepy.
I cook twice during the week.
What are some good options for lunch that I can freeze or use a couple of times?
seriously though, make kebabs, diff types, seekh, boti, chappli, tikka etc and freeze them. cut up veggies every other day. and pack some fresh veggies and some kebabs.
Apart from lunch at work, premade/frozen kababs are good to have around as backups for meals at home and when guests show up…especially shami kababs. Go easy on the meat though…especially red meat. Vary your lunches.

overall balance of red meat, and the right type of red meat will both help.
qeema (chicken qeema too) works well as well. with peas, or bell peppers, etc, freezes well, thaws well, is yummy, less chance of it drying out, and you get a more flavorful meal as well.
Egg… Fresh veggies…raw veggies…salads. try clean eating. if you are watching your weight then stick whole unprocessed foods. Salads with veggies, fruits, oranges.
Speaking of veggies…falafel. Or a falafel sandwich in a light bread/wrap. Veggie dumplings. Stuffed grape leaves. Healthy but filling stuffed pastries. Chicken/veggie pot pie. Shepherd’s pie.m
Get wheat chapatis/rotis and make different Chipotle-like rolls. Just stick leftover sabzis or kebabs in the roti and add veggies, cheese, beans, ketchup etc. Healthy lunch and not too messy if you pack the roll right.
For my husband and I used to cook in batches for the entire week every sunday (work lunch only). I have issues with frozen foods but my commute was 2 hours each day so had to suck it up
I would freeze it in ziplock containers and take it out the night before by putting in the fridge.
If I felt up for it, now n then I would grill a chicken breast the night before and add that to a salad as well
Mac n cheese
Chicken corn soup
Beef bourguignon
Vegetable lasagna
Since there are limited halal options near my work, my mom started making my lunches (currently living at home but moving soon after which time I will make my own of course!) but generally this is what I have been taking for the past few months:
-Tandoori chicken with boiled rice
Chicken jalfrezi with boiled rice
-Chicken pasta or pasta with qeema
-Piluaw
-Club sandwiches
Butter chicken with boiled rice
(I am not a fan of red meat).
I take the same thing two days a week after which time mom would make it fresh (as I only work 4 days a week).
Last night, I made chicken salad for two days so today I brought chicken salad sandwich, spinach salad, dressing and an orange.
What’s funny is…I don’t understand how to cook for only two people as I come from a big family so I am used to cooking in much larger quantities. It throws me off a lot but I am getting used to it.
This weekend, I am going to cook lunch for three days and then cook Wednesday night for the remainder of the week.
