The Scoville scale determines how hot a chilli is, by taking a solution of the chilli and mixing it with sugar syrup until the heat is not longer detected. It’s got something to do with how the sugar reacts with the capsaicin (what makes a chilli spicy).

If you added too much chilli, add some sugar.

That's an interesting fact...I always assumed you added yoghurt or tomatoes.So I'm guessing the sugar just dissolve in the salan...

why would anyone wanna reduce heat? i say scoop in another spoonful of cayenne pepper powder like a real desi. tsk
srsly though, yogurt/dairy is pretty much the only edible thing that can take the sting out of capsacin. have a pitcher of chaach or lussi waiting alongside your red hot meal.
