For instance Islam does not allow displaying of photographs of people (unless for identity or documetary evidence).
Similarly Islam does not allow the consomption of alcohol.
I believe (please correct me if I am wrong) there are actual texts in the Qur’an specifically forbidding these practices with equal weight.
Why do people dismiss one and strictly enforce the other?
Are we allowed to pick and chose parts of Islam that we agree or disagree with?

there is no specific verses in Qur'aan that says "Alcohol is Haram" or "Photographs are Haraam". There are verses in Qur'aan regarding the alcohol but NOT about photographs. It's thru the aHaadees that the alcohol has been considered/declared Haraam.

It is not just Islam, every religion ppl pick and choose on what to follow, because we are human, we are imperfect.

Surah Al Maidah verse 90 avoid us from use of alcohol.

I'm not sure of which verse, but isn't there something in the Qur'an that explains that any foreign substance that alters our body/ state of mind is forbidden?

The same verse indirectly says (i think) the word which is used is 'intoxication'
