why does my murgi break?

Its not that i gulaofy it too much but it still breaks. Chamch bhi nahi marti ziada phir bhi toot jatti hey :mad:

When you cooke chicken don't put water
coz chicken has water of their own.
Woh khudi pani nikal jate hai.
OUr chamach bhi nahi ziada hilane chaye.

It breaks because you probably don't fully defrost it. When you take chicken out of the freezer, make sure it thaws completely before you start cooking. This will also avoid bleeding of bones.

Right you should defrost it and let it drain thoroughly. Add no extra water to it while cooking. After frying the onions and stuff and adding the masaala to it fry the chicken for 5 minutes or so. If you think it might burn due to lack of water add yoghurt to it. About one cup should do for one chicken. Cook on a medium flame and stir it ever now and then but not too much. That can also cause breaking.

Fanta what exactly do you do to it? I've been trying to break mine while cooking, I over cook it, paani paani kar deti hooN, even try breaking it with chamcha phir bhi it doesn't get that tooti pooti si look.

Do NOT put it in water. That causes it to turn more watery. You should take it out of the freezer the night b4 and put it in a large seive over a bowl and leave it in the fridge overnight. By morning not only will it have defrosted but also drained of all excessive water/blood. Before cooking clean, rinse and drain for another 15 mins or so till ur masaala is ready.

2) I did defrost, may be i defrosted the wrong way. (I did waht Nilu does, dipped it in hot water till it defrosted and then cooked it, may be thats why it broke)
3) It wasn’t salan it was karahi.
4) We put yougurt in karahi anyways.
5) Frying it first might be a good option, my mom told me that too.
