Why are my Jalebis flat ?

Why are my Jalebis always flat and not crispy. I have tried out many recipes from different blogs and even the vahrevah video. I have taken care to ensure fermentation and that I fry in low-medium heat as suggested. Yet the Jalebi I make no way resembles the pictures in the blogs. The only thing that tastes right is the sugar syrup :stuck_out_tongue: . Anybody has any tried and tested Jalebi recipe ? I want to make it for my Sis-in-law for her birthday as it is her fav sweet. I believe this is one of my very few desi dessert failures.
