whole wheat pancakes

has anyone tried making whole-wheat pancakes? my husband is crazy about pancakes but regular flour is full of starch, so im looking for a healthier option. i want to try making it from whole-wheat instead of flour. i never use pancake mix, i always make it myself with flour, milk, eggs, sugar. so can i use whole-wheat alone or should i mix whole-wheat plus flour? if anyone has tried it, please share your recipe

I have a recipe. I’m not keen on box mixes either.

Wholewheat Pancakes

***Ingredients


5ml baking powder
375ml buttermilk
250ml wholewheat flour
15ml cinnamon
15ml castor sugar
2 egg whites
5ml vanilla extract

*The cinnamon can be left out or substituted with something else. My mum uses mixed spice instead of cinnamon.

*The vanilla extract can also be left out or substituted. I’ve also made these with almond extract and it’s worked nicely.

Method

  1. Dissolve the baking powder in the buttermilk in a small bowl and set aside.

  2. In a larger bowl, combine the flour, cinnamon and sugar.

  3. Add buttermilk mixture, egg whites and vanilla, and blend with a hand mixer.

  4. Spray a non-stick pan with cooking spray.

  5. Ladle the mixture into pan and cook until lightly browned on both sides.

Think you might need some orange juice to kill that bitter whole wheat taste. Regardless, let us know how it turned out.

^I’ve found that the acidity in the buttermilk does that.
